I’ve been eating a lot of salads lately.
Salads are a huge part of the “low carb lifestyle” so I’m trying my best to embrace them. Salad dressing helps a lot.
One of the things I’ve been making is chicken salad on top of regular salad. It is incredibly salad-y.
Chicken salad usually has celery, but I’ve never been a fan. (But then, is anyone a fan of celery? I have yet to meet one.) In any case, I use red bell pepper instead. I like to gussy up my chicken salad with fresh basil, parsley, and scallions. Sometimes I add purple basil from my herb garden, just for a little extra fanciness.
I really love this salad because there is absolutely nothing I can do to mess it up.
I can use a ton of green onion, or no green onion at all. It’ll be good either way. No purple basil? No problem. Who uses purple basil anyway? It’ll be totally fine without it.
Salads are cool that way.
Low Carb Keto Chicken Salad
This is a simple recipe for low carb chicken basil salad with only 2g net carbs per serving.

- 1/3 cup mayonnaise
- 1/2 cup red bell pepper, chopped
- 2 tablespoons scallions, chopped
- 1 tablespoon fresh basil, chopped

- salt & pepper
1. Chop everything.
2. Mix it up.
