Fruity Low Carb Marshmallows

There are days when I question my life choices. 

I'll give you a for instance. 

I spent a good chunk of the day attempting to replicate Lucky Charms Marshmallows.  That's just not right.

My only consolation is that I succeeded.  I came up with a low carb version that uses Erythritol for sweetness, Knox for consistency, Jello for fruity flavor and arrowroot for softness.  Not to brag, but I think I nailed it.

So here goes.  

It's the treat you never knew you wanted: a fruity low carb marshmallow that is magically delicious.


Fruity Low Carb Marshmallows


  • 1/2 cup cold water
  • 1/4 cup Swerve or equivalent sweetener
  • 6 envelopes Knox unflavored gelatine 
  • 1 1/2 cup hot water
  • 1 (.6oz) large envelope Sugar Free Jello (any flavor)
  • 1/4 cup arrowroot powder


1.  Line an 8 x 8 inch pan with parchment paper. If you'd like a softer feeling marshmallow, you can spray the parchment and sprinkle arrowroot powder on it.

2.  Place 1/2 cup of cold water into a small bowl and sprinkle the gelatine into it. Stir with a whisk until all the gelatine is dissolved, and it forms a paste.

3.  Place 1 1/2 cups water and sweetener in a saucepan. Gently heat and mix with a whisk until all the sweetener is dissolved and the water is warm. Do not boil.

4.  Add the dissolved gelatine to the sweetened warm water in the saucepan and mix well. Add the Jello and dissolve. Add the arrowroot and dissolve. Allow to cool. You can put it in the fridge for 20 minutes to cool it down. Just make sure that it doesn't set.

5.  Use an electric hand mixer to whisk the marshmallow mixture until it is light and fluffy and kind of spongy.

6.  Pour into the lined pan to set. Place in the fridge for 2-3 hours, then cut into squares or shapes with a sharp knife dipped in warm water.

7.  Store in the refrigerator.
