You know, I could have played it safe and called this Chicken Leek Soup.  But I just couldn't resist the name Cock-A-Leekie.

Who on earth came up with it?  Was it some sort of prank?

Turns out that the name is strictly descriptive.  Your classic Cock-A-Leekie has two main ingredients: Chicken (AKA Cock) and leeks.  And it's usually finished off with a couple prunes.  I have to say, the prunes are a pretty great addition, but unfortunately they are banned from the low carb diet.  (Sad face.)

To make up for the lost prunes, I added some sweet butternut squash to the recipe.  And some shittake mushrooms to round out the meal.

So there you are.  The oddly named but utterly delicious Cock-A-Leekie Soup.  

The name really does say it all.

Low Carb Cock-A-Leekie Soup

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 4 cups leeks, cleaned well and cut into 1/2 inch strips
  • 2 cups (8 oz) shittake mushrooms, sliced
  • 8 cups chicken broth
  • 4 cups (1 whole) cooked chicken, cubed
  • 2 cups butternut squash, cut into 1/2 inch pieces
  • 2 tablespoons red wine vinegar
  • 2 tablespoons parsley, chopped
  • salt to taste

Instructions

1.  Saute the leeks and mushrooms for 8 minutes on medium heat.

2.  Add the broth, chicken and squash and simmer for 15 minutes.

3.  Add the vinegar and parsley and serve.
