These chocolate peanut butter cookies might not look like much, but they are as tasty as all get out.

My kids and I have been chowing down on these no bake drop cookies.

They are just like their high carb cousins, but the oats have been swapped out for unsweetened coconut flakes.  Coconut flakes + cocoa powder + sweetener + peanut butter = an easy no bake treat.  And each cookie has only 213 calories and 1g net carb.

So yea, nom nom nom.  Me want cookies!

Low Carb Keto No Bake Chocolate Peanut Butter Drop Cookies

Ingredients

  • 2 tablespoons butter
  • 2/3 cup natural unsweetened peanut butter
  • 6 tablespoons Swerve or equivalent granulated sweetener
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup unsweetened coconut flakes

Instructions

1.  Toast the coconut flakes in a small skillet over medium heat until lightly browned.

2.  Add butter, peanut butter and sweetener to a medium sized bowl and microwave for 1 minute until melted.  Mix to combine.

3.  Add cocoa powder and toasted coconut flakes to peanut butter mixture.  

4.  Drop large spoonfuls of cookie mixture onto parchment covered cookie sheet.

5.  Put in the freezer for 20-30 minutes until hardened.  The cookies will still be soft.

6.  Store in the freezer.  Cookies will become gooey at room temperature.
