Real Low Carb French Toast

This low carb French Toast recipe uses SOLA Sweet Oat Bread, so it only has 3g net carbs per slice.  It’s just like the real thing.  



2 large eggs

1 teaspoon ground cinnamon

1/4 cup heavy whipping cream

3 tablespoons Swerve or equivalent granulated sweetener, optional*

1/2 teaspoon vanilla extract 

10 sliced SOLA Sweet Oat Bread

2 tablespoons butter


1.  In a small bowl, whisk together eggs and cinnamon until smooth and completely combined, 60-90 seconds.

2.  In a medium sized shallow bowl, mix together cream, sweetener, vanilla, and egg mixture.  

3.  Set up an assembly line of a plate of bread slices, the custard bowl and a plate for soaked bread slices.  Dip each slice of break into the custard, then remove the excess liquid with your fingers.  Place the soaked bread slices on the empty plate.  

4.  Add 1 tablespoon butter to a large skillet over Medium heat.  Fill the pan with slices of bread and cook until browned on both sides, 1-2 minutes per side.  Repeat with the remaining tablespoon of butter and slices of bread.

5.  Serve immediately.


*If you are going to use a sugar-free syrup, then you can skip the sweetener.
