Low Carb Keto Banana Pudding and Nilla Wafer Parfait

"Day-O, day-ay-ay-o.  Daylight come and me wanna go home."

I've had the "Banana Boat Song" stuck in my head all morning as I made this banana pudding and Nilla wafer parfait.  (below)

The video above is the first time that Harry Belafonte ever performed the song on TV. 

It was on a guest appearance on the Muppet Show in 1979.  It was at about this time that banana pudding with Nilla Wafers was at the height of its popularity.  In our house anyway.

It's one of those desserts from my childhood that I've missed since going on this low carb diet.

Both bananas and Nilla Wafers are off limits, but there are work arounds, if you are not afraid of a little extra work.  For this recipe, I made my own low carb Nilla Wafers, banana-free banana pudding and whipped cream.  Then I layered them into a parfait.  And it tasted great!  But now I must go.

Low Carb Banana Pudding and Nilla Wafer Parfait


Nilla Wafers:

  • 3/4 cup almond flour

  • 1/8 teaspoon salt

  • 1/8 teaspoon baking soda

  • 1/3 cup Swerve or equivalent granulated sweetener

  • 2 tablespoons water

  • 2 tablespoons heavy whipping cream

  • 1 large egg, separated

  • 2 teaspoons vanilla extract

Banana Pudding:

  • 1/2 cup water

  • 1 cup heavy whipping cream

  • 3 egg yolks

  • 1/3 cup Swerve or equivalent granulated sweetener

  • 1 teaspoon xanthan gum

  • 3/4 teaspoon banana extract

  • 1/2 teaspoon vanilla extract

  • 3-4 drops yellow food coloring, optional

Whipped Cream:

  • 1/2 cup heavy whipping cream

  • 1 tablespoon powdered Swerve or equivalent powdered sweetener


Nilla Wafers

1.  Preheat oven to 375 degrees F and line a cookie sheet with parchment paper.

2.  Combine almond flour, sweetener, baking soda, and salt in a medium sized bowl. 

3.  Mix together water and heavy cream.  Slowly mix into the dry ingredients.

4.  Mix in egg yolk and vanilla extract until smooth and well combined.

5.  Using a hand mixer, beat the egg white until stiff peaks form.

6.  Gently fold the whipped egg white into the batter.

7.  Spoon the batter out onto the cookie sheet in tablespoon increments.  Don't worry about the shape, because you're going to break the pieces up later.

8.  Bake for 15-17 minutes or until golden brown.

9.  Let cool about 5 minutes on the cookie sheet, then transfer to a cooling rack to cool.

Banana Pudding

10.  Heat cream and water in a medium sized saucepan until hot but not boiling.

11.  Whisk egg yolks until well blended.

12.  Mix sweetener and xanthan gum in a small bowl.

13.  When cream is hot, slowly add about 1/4 cup of the cream mixture to egg yolks, whisking quickly.

14.  Pour yolk mixture slowly into hot cream while whisking quickly.  Reduce heat to low, then gently sprinkle the sweetener mixture over pudding and whisk until smooth.

15.  Cook for 3-4 minutes or until thickened, then remove from heat.

16.  Stir in banana and vanilla extracts.  Add food coloring, if using.

17.  Break up the Nilla Wafers into small bitesized pieces.

18.  In a small to medium sized glass bowl, add half of the Nilla Wafers to the bottom of the bowl.  Add all of the pudding mixture and then top the pudding with the remaining Nilla Wafers. 

Whipped Cream

19.  Whip together the heavy whipping cream and sweetener in a medium sized bowl with an electric mixer.  Beat until stiff peaks form.

20.  Top the parfait with the whipped cream.

21.  Chill in the refrigerator for 1 hour.
