I've tried out a million low carb and Ketogenic recipes since then and I've come up with some really good recipes of my own. This blog is about keeping my New Year's resolution year after year.
Today's recipe was inspired by a Portlandia sketch I watched recently. (below)
It's this great film noir parody called "The Celery Incident". Steve Buschemi plays Marty, a vegetable marketing man who needs to drum up interest in his favorite vegetable: celery. He needs something new to get people jazzed about celery again. And at one point his wife says, "Well, what about Ants on a Log?" Ants on a Log is a classic 1950's snack made up of peanut butter stuffed celery sticks with raisins on top. Genius really.
So today I decided to make a low carb version of Ants on a Log.
My Ants on a Snow Covered Log is made from celery that has been filled with cream cheese and topped with pecan halves. It's a quick but surprisingly tasty low carb snack with only 1g net carb per celery stick. I think this recipe is going to do wonders for celery sales.
