Low Carb Lebanese Salad is a medley of cucumbers, onions, scallions, tomatoes and bell peppers with only 7g net carbs per serving.
1. Chop the tomatoes, cucumbers, scallions, onions, peppers, parsley and mint and mix together in a large sized bowl.
2. Add lemon juice, olive oil, salt, pepper and garlic to a blender and blend for 15 seconds until combined.
3. Add the dressing and toss the salad.
