And welcome to Rib Week here at Resolution Eats. If you checked in yesterday, you would have caught my recipe for Low Carb Country Style BBQ Ribs. They were so tasty, that I thought I’d keep the party going today with some Low Carb Memphis Style Baby Back Ribs.
These ribs are off the hook, if I may say so.
They’re crispy on the outside and fall-off-the bone tender on the inside. And the Memphis Style BBQ sauce is to die for. It’s sweet and spicy and full of flavor. So get your rib bib and your wet naps handy, and let’s make some Memphis Style Ribs!
Start by pre-heating the oven to 300 degrees F and covering a large cookie sheet with aluminum foil.
Dry a 4 pound rack of baby back ribs with paper towels.
Use a sharp knife to cut the fatty membrane on the concave side of the ribs and pull it off.
Brush 2 tablespoons extra virgin olive oil on all sides.
Mix up a spice rub using 1/2 tablespoon each of cumin, paprika, Swerve, garlic powder, chili powder, onion powder and salt.
Rub spices on all sides.
Bake for 2 1/2 to 3 hours until meat is tender on the inside and crispy on the outside. It should be dark brown in color.
To make the Memphis Style BBQ Sauce, melt 1 tablespoon butter over Medium heat in a medium sized sauce pan.
Add 1/2 teaspoon Worcestershire Sauce, 1 1/2 tablespoons apple cider vinegar and 1 cup tomato sauce to the pan.
Mix in 1/4 teaspoon cayenne pepper, 3 tablespoons Swerve, and 1/2 teaspoon each of garlic powder, onion powder and dry mustard.
Brush the BBQ sauce over the meat side of the ribs. Cut into individual ribs and serve.
And you’re done.
Soon you’ll have a beautiful rack of baby back ribs slathered in sweet and spicy Memphis Style BBQ sauce. And since we swapped out sugar-free sweetener for sugar in this recipe, each rib has less than 1g carbohydrate.

1/2 teaspoon Worcestershire sauce

1/4 – 1/2 teaspoon cayenne pepper, as desired

1/2 teaspoon dry mustard
1/2 teaspoon onion powder

4. Brush olive oil on all sides of ribs.
5. Mix together all spice rub ingredients and rub into ribs on all sides.
6. Bake, uncovered, for 2 1/2 to 3 hours until outside is crispy and inside is tender. It should be dark brown in color.
7. Melt butter for the BBQ sauce over Medium heat in a medium sized sauce pan.
8. Add remaining BBQ sauce ingredients and mix well to combine.
9. Brush the BBQ sauce over the meat side of the ribs.
10. Cut into individual ribs and serve with extra BBQ sauce on the side.
