This recipe for red, white and blueberry parfaits is a 4 ingredient dessert that takes less than 10 minutes to make. You just layer strawberries, whipped cream and blueberries. It’s low carb, sugar-free and very patriotic.
1 1/2 cup heavy whipping cream
4 1/2 tablespoons Confectioner’s Swerve or equivalent powdered sweetener
1 cup blueberries
2 cups strawberries, small diced
1. Add heavy whipping cream and powdered sweetener to a large bowl. Mix with an electric mixer until stiff peaks form, 2 minutes.
2. Use 6 (1/2 cup) (4 oz) glasses or ramekins. Layer blueberries, whipped cream and strawberries. Chill until ready to serve.
