So glad you could make it. Today I’m going to share my recipe for a big plate of real Italian spaghetti and meatballs that has only 255 calories and 5g net carbs. How? Well read on ladies and tramps, and I’ll show you how I did it.

To make the meatballs and sauce, you’ll need crushed tomatoes, ground beef, olive oil, eggs, garlic, vinegar, Italian Seasoning, parmesan cheese, salt, pepper, almond flour, and sugar-free sweetener.

And for the spaghetti, you’ll need shirataki noodles.

You start by pre-heating the oven to 350 degrees F and covering a cookie sheet with aluminum foil.

You’re going to make the sauce first so that it can simmer as the meatballs bake. Heat 1/4 cup olive oil in a large pan over medium heat. Add 3 cloves minced garlic and cook until softened, 2 minutes.

Add 28 oz crushed tomatoes, 1 tsp salt, 1/4 tsp black pepper, 1 TB Italian Seasoning, 1 TB vinegar and 2 TB sugar-free sweetener and mix well to combine.

Bring to a low simmer. Simmer until meatballs are finished cooking.

In a large bowl, mix together 3/4 pound ground beef, 1 clove minced garlic, 1/4 cup parmesan cheese, 3 TB almond flour, 1/2 tsp salt, 1/4 tsp black pepper and 1 egg.

Use an 1/8 cup measure (or 2 TB) to scoop out meatball mixture. Roll into meatballs and place on the cookie sheet.

Bake for 14-17 minutes until browned on top and cooked through.

Combine meatballs and sauce in the sauce pan.

Add 5 packages shirataki noodles to a colander and rinse under hot water until heated through. Dry with paper towels.

Serve spaghetti noodles with sauce and meatballs on top.

Sprinkle a little cheese on top and you’re done!
In about 30 minutes, you’ll have a batch of low carb spaghetti and meatballs with only 5g net carbs and 255 calories per serving. Not too shabby for a meal that is usually upwards of 60g net carbs and 600 calories.

In case you haven’t guessed, the secret to this low carb meal is the noodles.
I used shirataki noodles, which often go by the brand name Miracle Noodles. These low carb noodles are made from the root of the konjac yam and are entirely made up of fiber. They are edible but not digestible, which means that you can eat them but you’ll get no energy, carbs or calories from them. They are this miraculously odd un-food. Well worth a try.

Spaghetti Sauce:
1/4 cup extra virgin olive oil
