Keto Shrimp Scampi

Keto Shrimp Scampi is made of sweet and tender shrimp nestled in a buttery, garlicy, lemon wine sauce. It's a quick 15 minute entree with only 1g net carbs.


Units Scale
  • 2 tablespoons extra virgin olive oil, divided
  • 2 pounds large shrimp, peeled and deveined with tail on
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dry white wine or vermouth
  • 2 tablespoons fresh parsley, chopped
  • crushed red pepper
  • salt and pepper to taste



Step 1.  Heat a large skillet over High heat for 2-3 minutes until very hot.  Add 1 tablespoon olive oil and swirl in the pan to cover the bottom.  Add 1/2 of the shrimp and saute until just opaque, 1 minute.  Pour the shrimp into a bowl and set it aside.  Return the pan to heat and repeat the process with the remaining shrimp.

Step 2.  Return the skillet to the stovetop over Medium-Low heat.  Melt 1 tablespoon butter in the pan.  Add garlic and cook, stirring constantly until fragrant, 30 seconds. 

Step 3.  Remove the pan from the heat and whisk in lemon juice and dry white wine.  Whisk in the remaining 2 tablespoons of butter.  Add parsley.  Add crushed red pepper, salt, and pepper to taste.

Step 4.  Return shrimp and accumulated juices to the pan and toss to combine.  Serve immediately.
