Keto Pickled Eggs

These low carb and Keto pickled eggs are classic bar food made low carb.  And they have less than 1g net carb each.

Ingredients

  • 12 large eggs
  • 1 cup warm water
  • 2 cups red wine vinegar
  • 1/2 cup Confectioner's Swerve 
  • 1 teaspoon coarse salt
  • 4 teaspoons pickling spices
  • 1 bay leaf
  • 1/2 of an onion, sliced
  • 3 teaspoons red food coloring
  • 2 drops blue food coloring

Instructions

Boiled Method:  Place your eggs in a pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat, then cover, remove from the heat, and set aside 8 to 10 minutes. Drain, cool in ice water, and peel.

Instant Pot Method:  Place rack in the bottom of the Instant Pot and add 1 cup water.  Put the eggs on the rack.  Cook on High for 5 minutes and then natural release to depressurize.  Remove the eggs from the pot and submerge them in a bowl of cold water until cooled.  Peel the eggs.

To Pickle:  Mix together the warm water, powdered sweetener, red wine vinegar, salt, and food coloring until fully dissolved.   Put the eggs, onion, bay leaf, and spices in the pickling liquid in a plastic container and refrigerate for at least 2 days.

Notes

Wear gloves to keep the food coloring from coloring your hands. And resist the urge to put in more blue food coloring, since it will just go brown on you.
