These sweet and spicy low carb pickles have less than 1g net carb per serving.

Ingredients

  • 6 cups sliced cucumbers (about 2 pounds)
  • 1 cup sliced onion
  • 1 cup sliced red and yellow bell peppers
  • 1 1/2 cup white vinegar
  • 1 cup Swerve or equivalent granulated sweetener
  • 3/4 teaspoon salt
  • 1/2 teaspoon mustard seed
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon black pepper

Instructions

1.  Bring the vinegar, sweetener, and spices to a boil.

2.  Pour the liquid over the onions and cucumbers in a resealable container.

3.  Chill in the refrigerator for 4 days.
