Quick Pandan Waffles {Bánh Kẹp Lá Dứa}

You can make yourself a batch of these Pandan Waffles in about 8 minutes flat.

Ingredients

  • cooking spray
  • 1 teaspoon pandan extract
  • 3 large eggs
  • 1 tablespoon vegetable oil or melted coconut oil
  • 1/4 cup coconut flour or all-purpose flour
  • 2oz cream cheese
  • 2 tablespoons sugar or Swerve Granular
  • 3/4 teaspoon baking powder

Instructions

Step 1.  Preheat a standard or Belgian-sized waffle iron and spray it with cooking spray. There will be enough batter for 2 standard-sized waffles or 1 Belgian waffle.Spray the waffle iron.

Step 2.  Add all ingredients to the blender.Add ingredients to a blender.

Step 3.  Blend for 30 seconds. Scrape down the sides of the blender with a rubber spatula and then blend for another 30 seconds.Blend.

Step 4.  Pour enough batter onto the waffle maker to cover the wells and close the lid. Cook according to the manufacturer's instructions, usually 3-4 minutes until golden brown.Cook the batter.

Notes

The nutritional info is for waffles that use a sugar-free sweetener and coconut flour.
