This easy low carb Keto gazpacho takes 10 minutes to make and tastes like a million bucks.
Step 1. Add tomatoes (but not grape tomatoes), 1 1/2 cup cucumber, 3/4 cup red onion, 1/4 cup parsley, 1/4 cup basil, lemon juice, olive oil, salt, and pepper to a food processor or high powered blender and process until liquified, about 1 minute.
