But gazpacho, what is it and why should I eat it?
Gazpacho is a classic cold Spanish soup, usually eaten in the Summer. It's traditionally made with fresh tomatoes, cucumbers, red onion, and garlic. Gazpacho is often served with a side of crusty bread. And did I mention that it's fabulous? Cold tomato soup might sound weird, but it tastes amazing.

This cold vegetable soup is basically just a liquified salad. To make Keto Gazpacho, you blend tomatoes, red onions, cucumbers, parsley, lemon juice, olive oil, and basil in a blender and you're done. It's an easy low carb soup that you can throw together in 10 minutes.

Ingredients
- 6 cups chopped tomatoes (4-5 medium tomatoes)
- 2 cups chopped peeled cucumber (1 English cucumber), divided
- 1 cup chopped red onion (¼ red onion), divided
- ⅓ cup chopped fresh parsley, divided
- ⅓ cup chopped fresh basil, divided
- 2 tablespoons lemon juice (from 1 lemon)
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ½ cup grape tomatoes, quartered
Instructions
Step 1. Add tomatoes (but not grape tomatoes), 1 ½ cup cucumber, ¾ cup red onion, ¼ cup parsley, ¼ cup basil, lemon juice, olive oil, salt, and pepper to a food processor or high powered blender and process until liquified, about 1 minute.
Step 2. Add in remaining chopped vegetables and chill for 1 hour before serving. Garnish with remaining herbs.

The nutritional info is at the bottom of the recipe card. I'm not sure what you mean by "ratios" but the info is for 1 cup of soup.

I know everyone hates a review where you add things but (haha) I just had to replace the parsley with celery & celery leaves. I then added garlic powder and sriracha sauce for just a bit of a kick after my first taste of this great recipe. Can't wait until it's chilled when I will serve it with crabmeat & avocado for a complete meal. Umm, I might add a spinach salad too.

I’m confused. Does this require a yellow bell pepper or not? It is mentioned in the introduction but not listed in ingredients.

The recipe doesn't have yellow bell pepper in it, though it would be good to have it. When I said to add pepper, I meant black pepper. That's why the instructions said "salt and pepper".
