This is a Keto Spanish Rice with Chicken recipe, a low carb Arroz con Pollo, if you will. It’s cauliflower rice so each serving has just 8g net carbs.
Step 1. Preheat oven to 450 degrees F.
Step 2. Place chicken breasts in a large baking dish or roasting pan and brush with olive oil, front and back. Mix together chicken spices and sprinkle on top of the breasts, front and back. Bake for 15-18 minutes or until internal temperature reaches 165 degrees F. Tent with tin foil and allow to rest for 5-10 minutes before cutting into 1/2 inch wide slices.
Step 3. While the chicken is baking, heat the remaining olive oil in a large skillet over Medium heat. Add onion, bell peppers, and jalapeno pepper and saute until softened, 3-4 minutes. Add garlic and saute until fragrant, 1 minute. Add spices and cook for 1 more minute.
Step 4. Add cauliflower rice to the pan and saute until moisture is released, 8-10 minutes. Taste for doneness and cook a little longer if desired.
Step 5. Add tomato sauce to the pan and cook for 1 minute.
Step 6. Serve rice topped with sliced chicken breast.
*You can use frozen cauliflower rice straight from the freezer. Just add an extra minute or two.
