This morning I made some Keto Spanish Rice and hummed this little ditty all the while. It's the theme song for Netflix's Lemony Snicket's A Series of Unfortunate Events. My kids and I finished watching the final season last night. And let me just say, it was riveting. I've been a fan of the Lemony Snicket books for years, so I was super psyched when Netflix released their 3 season series based on the books. It is one of those rare shows that are equally enjoyable for parents and kids. It is satire at its most ridiculous and I cannot recommend it enough. (trailer below)

But let's talk Keto Spanish Rice with Chicken.
This is a low carb and keto version of Arroz con Pollo, so we're going to substitute cauliflower rice for regular rice. It's a cumin, oregano and chili powder flavored mix of bell peppers, onions, garlic, jalapeño peppers, tomato sauce and cauliflower rice. And the low carb Spanish rice has got some flavorful spice rubbed baked chicken on the side. The whole shebang clocks in at just 8g net carbs.
So take my advice: make up a batch of this Keto Spanish Rice with Chicken, fire up the old Netflix, and follow the travails of those melancholy Baudelaire orphans.

Keto Spanish Rice with Chicken

Ingredients
Chicken Breasts:
- 2 pounds skinless boneless chicken breasts
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cumin
- ½ teaspoon paprika
Spanish Rice:
- 1 tablespoon extra virgin olive oil
- ½ cup onion, small diced
- ½ cup yellow bell peppers, small diced
- ½ cup red bell peppers, small diced
- 1 jalapeno pepper, minced
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon oregano
- ½ teaspoon black pepper
- 24 oz riced cauliflower (6 cups), fresh or frozen*
- ½ cup tomato sauce
Instructions
Step 1. Preheat oven to 450 degrees F.
Step 2. Place chicken breasts in a large baking dish or roasting pan and brush with olive oil, front and back. Mix together chicken spices and sprinkle on top of the breasts, front and back. Bake for 15-18 minutes or until internal temperature reaches 165 degrees F. Tent with tin foil and allow to rest for 5-10 minutes before cutting into ½ inch wide slices.
Step 3. While the chicken is baking, heat the remaining olive oil in a large skillet over Medium heat. Add onion, bell peppers, and jalapeno pepper and saute until softened, 3-4 minutes. Add garlic and saute until fragrant, 1 minute. Add spices and cook for 1 more minute.
Step 4. Add cauliflower rice to the pan and saute until moisture is released, 8-10 minutes. Taste for doneness and cook a little longer if desired.
Step 5. Add tomato sauce to the pan and cook for 1 minute.
Step 6. Serve rice topped with sliced chicken breast.
Notes
*You can use frozen cauliflower rice straight from the freezer. Just add an extra minute or two.
