This is a low carb take on a classic salad. It’s a retro Keto wedge salad with just 165 calories and 4g net carbs.

Ingredients

Scale

1 head iceberg lettuce

3 hard boiled eggs, diced

4 slices bacon, crumbled

1/2 cup Ranch or Blue Cheese dressing

4 scallions, sliced

1/4 cup Blue Cheese, crumbled

1/2 cup grape tomatoes, quartered 

Instructions

1. Wash the iceberg lettuce and remove any unsightly outer leaves.

2. Cut the lettuce into quarters leaving the core to hold the leaves together. 

3. Place wedges on four salad plates with the outer leaves on the bottom and top with dressing and then toppings.
