    Keto Wedge Salad

    This Keto Wedge Salad recipe is easy to make and tasty to eat. It's a kicky retro appetizer with just 4g net carbs.

    Today we’re going to take a moment to celebrate the classic iceberg lettuce wedge salad.
    So let’s go back in time to the 1950’s and 60’s when the wedge salad was all the rage.

    Time was, iceberg lettuce was the only game in town.  You just didn’t see the varieties of lettuce that we are used to today.  But people back then made the most of it, creating truly delicious salads from the ingredients that were readily available at grocery stores at the time.  

    What is a wedge salad?

    Wedge salads are made from wedges of iceberg lettuce topped with a creamy dressing, blue cheese and hard boiled eggs, tomatoes, onions, cheese crumbles, you name it.  The lettuce, creamy dressing and blue cheese are must haves, but you can get funky with the rest of the toppings.

    How do you cut the lettuce and compose a wedge salad?

    You wash the iceberg lettuce and remove any unsightly outer leaves. Then cut the lettuce into quarters leaving the core to hold the leaves together.  Place wedges on four salad plates with the outer leaves on the bottom and top with dressing and then toppings.

    Be sure to add bacon because...bacon.

    How many calories are there in a wedge salad?  How many carbs?

    It’s low calorie with about 165 calories per salad. And it’s low carb with just 4g net carbs. That makes it compliant with diets like Keto, Paleo and Weight Watchers. Skip the blue cheese and it’s Whole30 compliant too.

    What do you serve with a wedge salad?

    You can serve this Keto wedge salad recipe with just about any kind of American fare.  Add some chicken or a juicy steak and you’ve got a low carb feast.

    Ingredients

    Scale

    1 head iceberg lettuce

    3 hard boiled eggs, diced

    4 slices bacon, crumbled

    ½ cup Ranch or Blue Cheese dressing

    4 scallions, sliced

    ¼ cup Blue Cheese, crumbled

    ½ cup grape tomatoes, quartered 

    Instructions

    1. Wash the iceberg lettuce and remove any unsightly outer leaves.

    2. Cut the lettuce into quarters leaving the core to hold the leaves together. 

    3. Place wedges on four salad plates with the outer leaves on the bottom and top with dressing and then toppings.

      This is just like a recipe my mother used to make. But her version used pickled eggs and Thousand Island dressing. Thanks for bringing back these memories!

        You know, when I was researching this recipe, I found an earlier version that used Thousand Island dressing. Sounds like a great alternative to Ranch or Blue Cheese.
