Ah, Cheat Day. I don't cheat a lot, but when I do it's usually with one of the family recipes that I make for everybody else at gatherings. There are some carb-heavy dishes and desserts that you just can't quite make Keto.
You can fake flour and you can fake potatoes, but you can't fake fruit. And this recipe for Ambrosia Salad is full of it: pineapple, mandarin oranges, and maraschino cherries. And mini marshmallows, so many mini marshmallows.
But fear not, I've got an Ambrosia work-around for strict Keto followers. It's a Keto Orange Fluff Salad. You'll need to make your own faux mandarin oranges out of Jello, but you can do it, I believe in you.
