    These Keto Antipasto Salad Skewers are fun and easy to make low carb appetizers with only 1g net carb per skewer.

    That's my mantra anyway.  I love using wooden skewers to make simple ingredients into easy to eat appetizers.  So when I saw a recipe for antipasto salad skewers on The View From Great Island, I went all in.  This idea is genius.

    Low Carb Keto Antipasto SkewersBut I can't say the word "antipasto" without thinking about Wallace and Gromit and the Curse of the Were-Rabbit.  (trailer below)

    In this chapter of the series, Wallace and Gromit run a pest removal service called "Anti-Pesto".  The town's prize vegetables are going missing and Wallace and Gromit have to get to the bottom of it.  But not before making a few ingenious inventions and getting into a hill of trouble.  If you have kids, then this is one of those rare family films that the whole family will actually enjoy.  It's really funny.

    Low Carb Keto Antipesto Skewers

    But let's get back to Keto Antipasto Salad.

    All you need to make a low carb antipasto salad is some Italian meat, cheese, and pickled vegetables.  Pretty much anything that's pickled and comes in a jar can go into an antipasto salad.  For these skewers, I used multi-colored grape tomatoes, pepperoncini, small mozzarella balls, fresh basil leaves, sopressata, mini gherkin pickles, marinated mushrooms, green olives, kalamata olives, artichoke hearts, prosciutto, and chunks of colby cheese.  But these are just some suggestions. 

    The sky's the limit when you are making antipasto salads.

    Ingredients

    wooden skewers

    multi-color grape tomatoes

    pepperoncini

    small mozzarella balls

    fresh basil leaves, folded in half

    sopressata, folded in to quarters

    mini gherkin pickles

    kalamata olives

    marinated mushrooms

    green olives

    artichoke hearts

    prosciutto, folded into sixths

    colby cheese, cut into chunks

    Instructions

    1.  Assemble antipasto ingredients of your choice.  The above list are just suggestions.
    2. Thread the ingredients on the wooden skewers in random arrangements.

    The nutritional ingredients are based on a skewer with the following ingredients: 2 grape tomatoes, 1 pepperoncini, a small mozzarella ball, 2 basil leaves, 1 slice of sopressata, 1 mini gherkin pickle, 1 marinated mushroom, 1 green olive, 1 artichoke heart, 1 slice of prosciutto and 1 chunk of colby cheese.
