When you eat Keto, you get used to refusing the bread.😢

So when a helpful waiter chirps, “Would you ladies like to start with some crusty Italian bread with a savory garlic and herb butter?"

My mouth says no, but my brain says, “Yes!! Give me that gaddam garlic bread!!”.

a woman sits in a restaurant waiting for food.

It is what it is. 🤷🏽‍♀️

And I can’t help you turn down those tempting bread baskets, but I can give you a recipe for Keto Garlic Bread. This low carb treat is sure to satisfy your bread cravings.  The garlic rolls that we are going to make today are made with Fathead dough, so the net carb count is just 5g.

    🤔 Fathead dough?

You've probably heard of it before. It's a gluten-free Keto bread dough made from mozzarella cheese, cream cheese, almond or coconut flour, baking powder, and eggs. These ingredients might not sound like they could make bread, but they actually do quite a good impression of it. Dip it in some marinara sauce and it's mwah, chef's kiss.

    🥖 Garlic bread

Classic garlic bread is a very simple affair. You just spread garlic butter on bread and toast it. But we are on a low carb diet, so nothing is that easy. For these Keto Garlic Bread Rolls, we’ll be making our own dough, forming the dough into balls, rolling them in herbs and parmesan cheese, baking them up, and then covering them in garlic butter. Sure, it’ll take longer to make, but at the end of it, you'll have a pan of delicious garlic bread rolls with only 5g net carbs each.

    💬 Keto Dieters Often Ask

    Is garlic OK for Keto?

It sure is. Garlic is very low in carbohydrates with less than 1 gram net carbs per clove. And the amount per serving is negligible.

How many carbs are in Fathead dough?

Fathead dough varies based on the preparation, but one serving of this recipe has 9 grams of carbohydrates and 4 grams of fiber, so it has 5g net carbs. That's about ⅕ the carbs of a traditional slice of garlic bread.

    Can you reheat Fathead bread?

These Keto Garlic Bread Rolls are best when they are right out of the oven. Because the dough is made from mozzarella cheese, it will harden as it cools. I recommend reheating it in the oven, air fryer or the toaster oven rather than in the microwave.

Fathead garlic bread in a cast iron skillet.

    📖 Instructions

    1. Pre-heat oven to 400 degrees F and grease a small 8 inch cast iron skillet liberally.
    2. In a large microwave-safe bowl, melt mozzarella and cream cheese in the microwave for 1 minute. Stir to combine. Microwave for another minute and stir again until smooth and fully combined. If it hasn’t completely melted, then cook for another 30 seconds and stir again.
    3. Mix together beaten eggs, almond flour, coconut flour, baking powder, and salt in a medium-sized bowl.
    4. Mix dry ingredients into the cheese mixture and mix well until fully combined.
    5. Mix together parmesan cheese and Italian seasoning on a shallow plate.
    6. Use a cookie scoop to scoop out portions of dough. Shape dough into 2 inch balls and roll the dough balls in the parmesan cheese until covered on all sides.
    7. Arrange the dough balls in the cast iron skillet or on a parchment paper covered baking sheet. You’ll need to make a few a little smaller in order to fit them into the middle of the pan.
    8. Bake for 20-25 minutes until golden brown. Loosely cover with a piece of foil at minute 10 to keep it from browning too much.
    9. In a small microwave-safe bowl, microwave butter and minced garlic for 2 minutes. Use a spoon to pour the garlic butter over each of the dinner rolls.
a hand holds a cast iron skillet with the rolls.

And that's all it takes to make Keto Garlic Bread. 👩‍🍳

So the next time the waiter asks if you would like some bread, you’ll calmly say,

“No, just a salad for me.” 😉

I’m wondering how some lupin flour could be used in this recipe?

It’s possible, but I haven’t tried it, so I don’t know what the flour substation ratio would be.

I Made these 8/17/20 - These were very good rolls. I followed the recipe exactly but, I absolutely had to knead this dough by hand, for quite a while, to get everything to combine well. I didn't mind, but it would be helpful to note that in the directions because I've made fat head dough many times but this dough was a much stiffer consistency. Once baked, the bread is VERY dense, but I like that. These had a great flavor and were strangely addictive! I got 12 rolls, 2 oz of dough each so they were good size rolls. I'll definitely make them again. Thanks for a great recipe!
