And I can’t help you turn down those tempting bread baskets, but I can give you a recipe for Keto Garlic Bread. This low carb treat is sure to satisfy your bread cravings. The garlic rolls that we are going to make today are made with Fathead dough, so the net carb count is just 5g.

You've probably heard of it before. It's a gluten-free Keto bread dough made from mozzarella cheese, cream cheese, almond or coconut flour, baking powder, and eggs. These ingredients might not sound like they could make bread, but they actually do quite a good impression of it. Dip it in some marinara sauce and it's mwah, chef's kiss.

Classic garlic bread is a very simple affair. You just spread garlic butter on bread and toast it. But we are on a low carb diet, so nothing is that easy. For these Keto Garlic Bread Rolls, we’ll be making our own dough, forming the dough into balls, rolling them in herbs and parmesan cheese, baking them up, and then covering them in garlic butter. Sure, it’ll take longer to make, but at the end of it, you'll have a pan of delicious garlic bread rolls with only 5g net carbs each.

Fathead dough varies based on the preparation, but one serving of this recipe has 9 grams of carbohydrates and 4 grams of fiber, so it has 5g net carbs. That's about ⅕ the carbs of a traditional slice of garlic bread.

- Parmesan cheese

📖 Instructions
- Pre-heat oven to 400 degrees F and grease a small 8 inch cast iron skillet liberally.
- In a large microwave-safe bowl, melt mozzarella and cream cheese in the microwave for 1 minute. Stir to combine. Microwave for another minute and stir again until smooth and fully combined. If it hasn’t completely melted, then cook for another 30 seconds and stir again.
- Mix together beaten eggs, almond flour, coconut flour, baking powder, and salt in a medium-sized bowl.
- Mix dry ingredients into the cheese mixture and mix well until fully combined.
- Mix together parmesan cheese and Italian seasoning on a shallow plate.
- Use a cookie scoop to scoop out portions of dough. Shape dough into 2 inch balls and roll the dough balls in the parmesan cheese until covered on all sides.
- Arrange the dough balls in the cast iron skillet or on a parchment paper covered baking sheet. You’ll need to make a few a little smaller in order to fit them into the middle of the pan.
- Bake for 20-25 minutes until golden brown. Loosely cover with a piece of foil at minute 10 to keep it from browning too much.
- In a small microwave-safe bowl, microwave butter and minced garlic for 2 minutes. Use a spoon to pour the garlic butter over each of the dinner rolls.

It would be possible, but I designed the recipe to use both flours, so I don't know what the exact substitution ratio would be.

Made these tonight and mixed roasted garlic into the mix with Italian seasoning and rolled the balls totally in parm, then thickly Coated my cast iron in clarified butter .... it was amazing, I’ve been doing keto for nearly a year and was looking to bing tonight and this with home made marinara .. yup .. worth it ...

Can the dough be refrigerated to bake later?

I don't recommend it. The mozzarella in the dough gets tougher and harder to handle as it cools, so it's best to make up the dough and bake it right afterwards. For the same reason, these garlic rolls are best eaten warm.
