Hi ho 👋
Today I'm going to show you how to make the noodle dish that is beloved by college kids the world over. Good old ramen noodle soup. So comforting, so easy to make. Just boil water and mix it with the uncooked noodles and that neon yellow flavor packet. Heaven. But the instant version isn't so Keto-friendly, so we'll need to improvise.
So let me show you how to make a quick Keto Ramen Soup.
🍲 Ingredients
- Chicken Broth
- Coconut Aminos or Soy Sauce
- Salt & Pepper
- Rotisserie Chicken
- Rotisserie Chicken Pan Juice
- Soft-Boiled Eggs
- Miracle Noodles
- Scallions and Cilantro
🥕 Optional Ingredients
I like to keep my Keto Ramen simple, but you can get fancy with your ingredients if you like. You can add sauteed veggies like shiitake mushrooms, bok choy, cabbage, carrots, zucchini noodles, chilies, red peppers, garlic, ginger, bean sprouts, and pre-cooked spaghetti squash. And you can spice it with a few sprinkles of onion powder, garlic powder, ¼ cup of miso paste, or chili sauce as desired. All these ingredients add flavor and texture to the dish but are purely optional.

🍜 Best Keto ramen noodles
For this Keto Ramen Soup, I replaced the classic wheat flour ramen noodles with zero-carb, zero-calorie shirataki noodles. These noodles often go by the name “Miracle Noodles” because they seem too good to be true. The secret to shirataki noodles (also called konjac noodles) is that they are completely made of fiber, so the 1g carb per serving gets canceled out by the 1g fiber.
It’s a great solution for noodle-loving Keto dieters.

🤔 Coconut aminos or soy sauce?
Which one to choose? In case you haven't heard of coconut aminos: it’s a dark sauce that tastes very similar to soy sauce. But instead of being made from wheat and soy, it’s made from the sap of the coconut plant. The sap is fermented until it has a nice rich salty flavor. This faux soy sauce is lower in salt and can be eaten by people who eat gluten-free, wheat-free, and soy-free.
Wait- soy sauce has wheat in it?
Yes, wheat is actually the main ingredient in soy sauce. It’s made from soybeans, wheat, salt, and a fermenting agent. The sugar is eaten up in the fermentation process, but you know, it's still made from wheat. So while it is technically low in carbohydrates, if you are a Keto stickler, you may want to go with the Coconut Aminos in your Keto Ramen.
But if you only have soy sauce in the fridge, then just use that.
🐓 Rotisserie chicken
I just want to take a minute to sing praises of the rotisserie chicken. It's so salty and so delicious and so ready at the exact right time. (When you cook a chicken, it never takes as long as you imagine it will!) And I just can't wrap my head around the fact that you can buy a perfectly cooked and seasoned chicken at the grocery store for less than it costs to buy an uncooked chicken. Just... how?
Quick, buy the chicken before the store figures it out!
📖 Instructions
- Add chicken broth to a large stockpot or dutch oven and bring to a simmer. Add pan grease, and coconut aminos or soy sauce to the pot and stir until dissolved. Salt and pepper to taste.
- Pull the rotisserie chicken into bite-sized pieces.
- Slice scallions diagonally into 1 inch long pieces. Use the dark end as well as the light ends.
- Add shirataki noodles to a colander and rinse with water.
- Add shirataki noodles and chicken to the hot broth and cook until they are heated through.
- Compose 4 large bowls of soup, adding ¼ of the noodles, broth, scallions, and eggs to each bowl.
- Garnish the Keto Ramen with cilantro leaves and serve immediately.
💬 Keto Dieters Often Ask
The usual ramen that comes in a cup or a bag is in no way Keto-friendly, so put it out of your mind. But if you have one specialty ingredient and 10 minutes, you can make yourself a steaming bowl of Keto Ramen.
That is a resounding yes. The classic broth from powder is full of sodium and chemicals, so you should avoid it, but if you make your own ramen broth out of chicken broth and coconut aminos or soy sauce then you are golden.
And that's it. 👩🍳
This Keto Ramen with Chicken is a little more involved than boiling water and putting it in a styrofoam cup, but not by much. Using the pre-cooked chicken is a time-saver as is using an Instant Pot to hard-boil the eggs. So it'll only take about half an hour to throw together this yummy Keto chicken ramen soup. And it's got just 360 calories and 4g net carbs, so you can eat it guilt-free.
Sweet! 🥰

Great recipe. Thanks so much.
Note: Soy sauce is not necessarily made with wheat. Some versions are made with roasted soybean powder as a substitute. My husband has celiac disease so we buy gluten-free soy sauce, which is widely available in grocery stores here in eastern Canada.
