    Today I’m going to share a recipe for Keto Egg Drop Soup, so naturally, I’ve been thinking about George Costanza from Seinfeld.  As you may or not know, George loved Kung Pow Chicken, and he liked this chicken spicy.  He was a regular Chinese food connoisseur

    Annnnyhoo. Let's talk about Keto Egg Drop Soup.

    What is Egg Drop Soup?

    Egg Drop Soup is a classic Chinese soup made up of thickened chicken broth and a cooked egg.  The name “Egg Drop” comes from how the soup is made: by dropping raw egg into hot soup.  But the direct translation in Chinese is “egg flower soup”, because the egg creates a swirly flower like pattern after it cooks in the broth.

    Is Egg Drop Soup Keto?

    The Egg Drop Soup you can order in a Chinese restaurant is thickened with cornstarch, so it is not Keto.  It will probably be lousy with MSG as well, so if you are following a low carb diet, it’s best to make a low carb version of Egg Drop Soup at home.

    What are the carbs in Egg Drop Soup?

    One cup of restaurant bought Egg Drop Soup has 10 grams of carbohydrate.  But don’t fret, the Keto Egg Drop Soup recipe I am going to share today has just 2g net carbs.  And it’s soy-free too since we are going to use Coconut Aminos instead of traditional soy sauce.  But if you only have soy sauce, then go ahead and use the soy sauce.

    Is Egg Drop Soup low in calories?

    Restaurant Egg Drop Soup only has 66 calories, and this low carb Egg Drop Soup is just 57 calories.  So if you are watching your caloric intake, Egg Drop Soup is a great Chinese appetizer option.

    What are the ingredients in Keto Egg Drop Soup?

    To make this low carb Chinese soup, you’ll need:  chicken broth, fresh ginger, garlic, coconut aminos, arrowroot starch, eggs and scallions.

    How do you make Low Carb Egg Drop Soup?

    First, you bring the chicken broth to a boil. Lower the heat to Low and keep at a simmer.  Then add the ginger and garlic and simmer for 15 minutes.  Strain the broth and return to the stove.  Bring back to a simmer.  Add in the coconut aminos or soy sauce.  Mix together arrowroot and water and add to the broth and simmer until slightly thickened.  Slowly whisk in the beaten eggs, then remove from the heat.  Add to soup bowls and sprinkle scallions on top.  Serve immediately.

    So in about 30 minutes, you can make a bowl of delicious Keto Egg Drop Soup with only 57 calories and 2g net carbs.

    Ingredients

    Scale
    • 4 cups chicken broth
    • 1 tablespoon fresh ginger, grated
    • 1 clove garlic, minced
    • 1 tablespoon coconut aminos or soy sauce
    • 1 tablespoon arrowroot starch
    • 2 tablespoons water
    • 2 large eggs, beaten
    • 1 scallion, sliced

    Instructions

    1.  Bring the chicken broth to a boil in a medium sized sauce pan.  Lower the heat to Low and keep at a simmer.

    2.  Add the ginger and garlic and simmer for 15 minutes.

    3.  Strain the broth and return to the stove.  Bring back to a simmer.

    4.  Add in the coconut aminos or soy sauce.

    5.  Mix together arrowroot and water.  Add to the broth and simmer until slightly thickened, 1-2 minutes.

    6.  Slowly whisk in the beaten eggs.  Remove from the heat.

    7.  Add to soup bowls and sprinkle scallions on top.  Serve immediately.
