Hi ho.
It’s Day 1 at home with my family, trying to avoid contact with the Virus. I keep thinking of that scene from Lost where we meet Desmond, a guy stuck underground in a bunker, whose whole job is to type a series of numbers into a computer at specific times. All he does is exercise on his little bike, eat non-perishable food, listen to record albums and punch numbers into that computer.
Annnny hoo, healthy gum drops.
Time to share a good inside day recipe with you. It’s for a homemade version of Sugar Free Gum Drops that is sure to raise your spirits, whether you are 8 or 80.
The good news is that you can make sugar free jelly candy with ingredients that are probably in your pantry already.
To make these candies, you’ll need unsweetened applesauce, Sugar-Free Jello, unflavored gelatin and a sugar-free granulated sweetener of your choice.
I hesitate to call these candies “Keto” because they contain applesauce, but they are definitely Keto friendly.
You can eat 8 of these candies and the carb count is just 4g. To make these sugar-free gum drops, all you need to do it combine all your ingredients, bring them to a boil and then chill the mixture for several hours in the refrigerator.
And that's about it.
Cut them into squares, roll them in sweetener and you are done. You’ll have a healthy gummy candy for you and your kids that won’t have them bouncing off the walls.
Ok, now I must be going. I have a date with an exercise bike.

hi!! what amount of water?
EmilyKrill says
Hi! None. There isn't any water in this recipe. The Jello combines with the liquid in the applesauce to jell, so you don't need to add water.

You can buy silicone candy molds online to make these in fun shapes. Each kit comes with at least one eye dropper to fill the wells of the mold. Just spray the mold with nonstick spray before filling.

The taste and texture of these is great. However, shortly after I take them out of the mold, they are "weeping". Any suggestions?

That's just the way the sweetener works unfortunately. When it happens, I sprinkle a little more sweetener over the outsides of the candies until they feel dry again.
