This Keto toasted almond cake is a rich, dense torte with only 4g net carbs per slice.

Greetings.
Today I'm going to share my recipe for a low carb and Keto toasted almond cake, but first, I need to do a little bragging. I'm a Pittsburgher, born and raised, so imagine my pride at having a cake from Pittsburgh named the best in all the land.
It's true, the Huffington Post named a burnt almond torte made at Pittsburgh's Prantl Bakery to be the "Greatest Cake American Has Ever Made".
And it truly is a thing of beauty. It's a two layer affair with a lovely custard in between the layers. And it's got a lighter than light buttercream frosting sprinkled with candied sliced almonds. As the Huffington Post put it, "It is just a damn good cake -- and taking a bite out of one is like reaching into the sky and stuffing a cloud into your mouth."

Who wouldn't want to eat an almond flavored cloud?
So this morning, I came up with a low carb version of America's Greatest Cake. I pared back my torte to be a single layer, so that anyone can easily make it. And it's got all the flavor of the original, just with 4g net carbs per slice.

Now, you might be wondering what makes this low carb cake a "torte".
Tortes are a fancy subset of cakes, so every torte is a cake, but not every cake is a torte. Tortes are usually layered, but can be a single layer like this one. And they are often flourless or use ground nuts as their base. Check. A torte is usually quite dense, which actually sets this Keto almond cake apart from Prantle's. The almond flour, cream cheese and egg base make this low carb torte extremely moist and very rich.
So this toasted almond torte may well be the Greatest Low Carb Cake That American Has Ever Made. (Applause)

My family doesn't like the taste of coconut can I just use more almond flour instead.
EmilyKrill says
No, almond flour doesn’t absorb liquid like coconut flour does, so it’s not a good idea to substitute one for the other in a recipe like this one. The coconut taste is very subtle though, so I bet they’d still like it. Or you could just choose an all almond flour low carb cake recipe and use the frosting and sliced almonds from my recipe. This one looks good. https://healthyrecipesblogs.com/keto-birthday-cake/#wprm-recipe-container-19660

Awesome cake I did skip the frosting as I wanted a lite version. Have you played with this as a base like switch the extract flavors? Add cocoa? Carrots? I think I will play with flavors using the base as the texture was spot on. I do a lot of low carb baking and this is a keeper! Oh and my kids are bucket filler too 😉

Thanks so much for letting me know you like the cake. It is my go to recipe for vanilla cakes. I used it to make a Strawberry Crumb Cake recently and it turned out really well. https://www.resolutioneats.com/blog/strawberry-crumb-cake/ It the vanilla cake with strawberry filling and a crumble topping on top. Hope you give this one a try too. Thanks again for your nice note!

Oh, those sound like great flavors to use with this cake batter! I use the recipe all the time for different things too. Here's a favorite- it's the cake base topped with strawberry filling and a crumble topping. https://www.resolutioneats.com/blog/strawberry-crumb-cake/

I enjoyed a burnt almond torte from Prantls before I went keto and I'm so glad I did. However, I was blown away by this cake. It was loved by my church who eat the SAD and they raved about it. They were amazed that this was sugar and gluten-free and I have to agree. I've made several keto cakes and something always reminds me that it's gluten-free because of the terrible density. You claim that this cake is dense, but I have to disagree. It is absolutely perfect! You are AWESOME!!!

My kids have a book that is all about how everyone carries around an invisible bucket, and when people say mean things, they are emptying your bucket, but when people say good things then your bucket gets full. So thank you far filling my bucket. Your nice comment made my day.

This sounds awesome! I would love all the crunch from the almonds.
EmilyKrill says
Yes, it's got almond flour, sliced almonds and almond extract so all the almond bases are covered.
