Broccoli waffles might sound a little bit weird but are actually really tasty.

Ingredients

- 1 cup broccoli, processed
- 1 cup shredded cheddar cheese
- ⅓ cup grated parmesan cheese
- 2 eggs, beaten
Instructions
Step 1. Spray waffle iron with cooking spray and preheat.
Step 2. Using a high-powered blender or food processor, process broccoli until it's the consistency of rice.
Step 3. Mix together all ingredients in a medium-sized bowl.
Step 4. Add ⅓ of the mixture to the waffle iron and cook for 4-5 minutes until golden and cooked through.

Is it possible that Ms. Zorya's complaint stemmed from perceived greasiness rather than the actual fat content of the batter? Perhaps the copious water in the broccoli gave the oil from the cheeses nowhere to go, and it essentially floated around outside of the other ingredients. Cheese in the pan or elsewhere can easily devolve into a oily mess if you're not careful. I wonder if dehydrating the broccoli first would allow the dried vegetable bits to soak up much of the cheese oil, resulting in a more even distribution of said oil without perceived greasiness. I also wonder if a touch of almond flour or meal along with baking powder would increase the internal surface area enough that the oil would be more "spread out," further reducing apparent greasiness.
I want to try this experiment myself once I've restocked on a decent Parmesan! *lightning flashes wildly outside of the mad-scientist laboratory, and Igor silently awaits instructions* ^_^
