    Hiya. 👋 

    Today I’m going to share a recipe for Sugar-Free Snickers Pie.  Will it be “enrobed in milk chocolate” like the original?  Well, no.   

    Not exactly.

    But we will drizzle it with sugar-free dark chocolate, how’s about that?

    This super tasty dessert has a chocolate crumble crust, followed by a vanilla cream filling, then topped with roasted peanuts and drizzled caramel and chocolate.

    It's pretty spectacular. 😍

    My mom came by as I was doing all the sprinkling of peanuts and drizzling of chocolate and caramel and whatnot.  She snuck some bites of all the leftover ingredients and was like, “This is good.  Like, really really GOOD.  And this is sugar-free?”

    Yep, it's sugar-free and you can’t tell the difference at all.

    I used both granular and powdered Swerve for this recipe because it is a zero-calorie, zero net carb sweetener that has no effect on blood sugar. 

    Here are the ingredients that you’ll need to make this Snickers Pie:

    • almond flour
    • Swerve Granular
    • unsweetened cocoa powder
    • vanilla extract
    • butter
    • heavy whipping cream
    • cream cheese
    • Lily's Sugar-Free Baking Chips
    • Swerve Confectioners
    • coconut oil
    • salted peanuts

    This pie is all kinds of healthy.

    Because the pie uses almond flour for the crust, Lily's Sugar-Free Baking Chips for the chocolate, and Swerve for the sweetener, it is very Keto-friendly. So it's sugar-free, grain-free, and gluten-free to boot. Each slice has 318 calories, 2g net carbs, and a whopping 32 grams of protein. Not too shabby!

    It is not technically a no-bake pie, because you bake the crust.

    But it feels like a no-bake pie because it’s got a crumble crust and the filling is uncooked.  It’s a light and fluffy cream pie filling topped with the aforementioned peanuts, caramel, and chocolate.  And it only takes 10 minutes to bake the crust, so it’s pretty darn quick.

    So Snickers pie is one of my go-to party desserts. 🥧

    I leave it on the dessert table, and just wait for people to ask me for the recipe.  Do I gloat when I tell them that it is actually sugar-free?   

    I might, just a little bit. 😉

    Ingredients

    crust:

    • ¾ cup super fine almond flour
    • ¼ cup Swerve Granular
    • ¼ cup unsweetened cocoa powder
    • 1 teaspoon vanilla extract
    • ¼ cup butter, cut into large chunks

    caramel sauce:

    • ¼ cup butter
    • 1 tablespoon Swerve Granular
    • 1 teaspoon vanilla extract
    • 2 tablespoons heavy whipping cream

    filling:

    • 12 oz cream cheese, softened
    • 6 tablespoons Swerve Granular
    • 1 teaspoon vanilla extract
    • 1 cup heavy whipping cream

    chocolate sauce:

    • ⅓ cup Lily's Sugar-Free Baking Chips
    • 1 tablespoon Swerve Confectioners
    • 2 teaspoons coconut oil

    ⅓ cup salted peanuts

    Instructions

    Step 1.  Preheat the oven to 375 degrees F and get out a pie pan.Step 1 Pre-Heat Oven Snickers Pie

    Step 2.  Place almond flour, sweetener, and cocoa powder in a food processor or blender.  Pulse to blend. Add the vanilla extract and butter and blend until the mixture comes together to form a dough. Transfer the dough to the pie pan and press the dough evenly into the bottom and sides of the pan.  Use a fork to add holes in the crust for the steam to escape.Step 2 Blend Snickers Pie

    Step 3.  Bake for 10-12 minutes.  Allow to cool in the pan for 1 hour.  The crust will firm up as it cools.Step 5 Bake crust for Snickers Pie

    Step 4.  As the crust is cooling, make up the caramel sauce.  Add the butter for the caramel sauce to a small saucepan.  Cook over medium heat until golden and just boiling.  Add sweetener to the pan, turn the heat down to low and simmer for 1 minute.  Add vanilla extract and heavy whipping cream and stir well.  Set aside to cool and thicken, about 1 hour.  If it separates, just mix it until combined again.Step 7 Mix up Caramel sauce for Snickers Pie

    Step 5.  Add filling cream cheese, vanilla extract, and sweetener to a large bowl and whip with an electric mixer until light and fluffy.  Add in cream and whip until hard peaks form.  Store in the refrigerator until ready to use.Step 8 Whip up filling for Snickers Pie

    Step 6.  Fill the cooled crust with the filling mixture.Step 9 Fill with cream filling for Snickers Pie

    Step 7.  Microwave chocolate chips, sweetener, and coconut oil in 30-second increments until melted and combined, about 90 seconds.  Allow to cool for a few minutes.Step 10 Melt chocolate for Snickers Pie

    Step 8.  Drizzle half of the caramel sauce onto the top of the pie.  Drizzle half of the chocolate sauce over the pie.  Sprinkle with peanuts and repeat until you have used up all the sauce.Step 11 Drizzle Caramel and Chocolate Sauces

      Thank you so much for sharing this recipe! I have been struggling with Keto and having a sweet tooth. This came out amazing! My caramel sauce didn't thicken at all not sure what I'm doing wrong made it twice but it didn't matter put pie in fridge and it hardened up and tasted just like real Caramel! Absolutely amazing no one could tell it was sugar free it sure doesn't look or taste it. 🙂

      We loved the pie. My only problem was the chocolate and caramel got too thick to drizzle. What am I doing wrong?

        Good question. I haven’t had this problem before. You can thin down the chocolate with coconut or vegetable oil until it’s pourable. I’m not sure how to thin the caramel though. You need to use it immediately after cooking it, because it does solidify quickly. Beyond that I don’t know.

            Sorry, it's be awhile since I made the pie! I forgot that the caramel needs to cool a bit so it doesn't melt the whipped topping. Keep an eye on the caramel as it cools and try to find the sweet spot between being pourable and cool enough not to melt the topping.

      This was delicious! We made some over the weekend when my husband couldnt handle the lack of sweets any longer. This truly hit the spot! Awesome recipe. I think next time though I will blend the caramel sauce into the cheesecake mixture to really get that caramel flavor throughout.

      Hi, please tell me, do you grease the pie pan before putting the crust in? If yes? Is coconut oil spray or butter better for greasing? I have glass pie pans. This recipe looks like a winner! Thanks!

      Since I started keto, Jan 1st 2019, I must have made at least ten of these pies and shared the link to the recipe multiple times in several different facebook groups. I know people have tried it and loved it, it’s a shame they aren’t taking the time to rate it. The only changes I have occasionally made to the original recipe are to use pecans instead of peanuts, adding peanut butter powder to the filling and sometimes using a melted lindt bar and cream instead of the chocolate topping recipe. This pie got me through the first two months of keto ❤️❤️❤️❤️❤️

      OMKETO...I decided to make this recipe in cupcake tins (lined). This is the BEST dessert..man if if KETO is wrong, I don't want to be right!!! The only thing I left out was the nuts...the hurt my tummy. But this recipe is making my non keto friends change their mind! Thank you!! I will be trying more of your desserts!!!

      How many slices does this need to be cut into to have the one slice at 4 g of carbs?

        If you cut the pie into sixths, then each slice would have 4g net carbs. The nutritional info is for 1 slice of a pie that's cut into 12 pieces. So each smaller slice has 2g net carbs and if you double that, you get 4g net carbs.
