World’s Greatest Low Carb Keto Waffles

This is it. The World’s Best Low Carb Pancake and Waffle batter. Hands down.

Ingredients
- 2 large eggs
- 2 oz cream cheese
- 2 – 4 tablespoons almond flour*
- 1 tablespoon coconut oil or melted butter**
- 1/2 teaspoon baking powder
Instructions
1. Add all ingredients to a blender and blend until smooth.
2. Pour the batter into a pre-heated, lightly greased waffle maker and bake according to manufacturer’s directions. (Usually 2-3 minutes.)
3. When done, use a fork to lift it off the grid.
Notes
*For thicker, breadier waffles, add 1-2 tablespoons more almond flour to the 2 tablespoons in the recipe. If you add 1 tablespoon more, then the net carbs are 6g. If you add 2 tablespoons more, then the net carbs are 7g.
**Omit oil if using for pancake batter.

I made this recipe today and I thought it was really good. I used only 3 Tbs of almond flour, and added 2 scoops of Dulce de Leche protein powder with maybe a tablespoon of almond milk. I also used a mini waffle maker instead. I got 5 mini waffles. I ate 3 and will freeze the other two for tomorrow! The waffles were fluffy, and tasted yummy. I’m sure I changed the nutritional value but I am working on reducing my carbs, not quite ready for full Keto.

While I definitely didn’t find these to be the best ever waffles or even keto waffles, I did like them. My boyfriend thought the coconut oil flavor was too strong. I love the taste of coconut oil and felt it was the only thing really giving these any flavor so I liked it. I used the 1 egg to 3 tablespoons ratio. If I make them again I would maybe add a bit of vanilla extract, salt, and maybe a combination of coconut flour and almond flour to try and improve the flavor. The texture was great!

I just tried your keto waffle recipe. I am fairly new to keto like almost 3 months in and have tried several keto recipes that I did not like. I hesitantly tried this recipe. I did the 4 tbs. of almond flour but added some vanilla and a little bit of cinnamon. they were delicious but still had a little bit of an egg taste to me. Do you think I could cut down to one egg and it would work? With that being said I loved the waffles otherwise with sf syrup. Thank you for this and me being able to eat almost like a normal person……..I saved half for in the morning…..

Hi! So I just made these and I love them, but I was a bit confused with the carb count. In the recipe it says 2-4 tablespoons of almond flour. On the nutrition chart you said it was 7 grams of carbs and 2 grams of fibre, which would make one waffle 5 net grams of carbs, but on the bottom commentary below that your notes say that if you add two more tablespoons it would make 7 net carbs. Are you talking about adding two more tablespoons to the 4 existing tbls?

If you use 2 tablespoons almond flour, the waffles will have a total of 5g net carbs. If you use 3 tablespoons of almond flour, you’ll have 6g net carbs and if you use a total of 4 tablespoons almond flour, it will have 7g net carbs.

I have been trialing so many waffle recipes and my daughter has not liked them at all. She told me to give up. I said one more trial and than we would give up. She forward your recipe to me. We had to swap the ‘cream cheese” for silken tofu because she is not able to eat real cream cheese nor the vegan cream cheese. I have been Keto for 2 years and I have tried SO many waffle recipes. They always cook up soggy – and there is nothing less appetizing than a soft, squishy waffle. Truthfully, I didn’t have much hope this time, either, but I plowed ahead as I was really craving a hot, crispy waffle breakfast. I have a Dash mini waffle maker that I just purchased to keep from having to use my large Belgian waffler for just one person. I used 1 egg, about 3 tablespoons almond flour, 1 tablespoon cream cheese I softened slightly in the microwave , 1/2 tablespoon coconut oil and a 1/2 teaspoon baking powder. I mixed all the ingredients together in a small, deep bowl with a silicone spatula – less clean up than a blender for such a little amount. One third of the batter filled my Dash for 1 waffle and the recipe made 3 waffles. These are AMAZING!! They baked up crispy on the outside, tender on the inside and with no eggy taste. I put this recipe in Cronometer and the macros were: 2.85 net carbs, 26.2 fats, 11.7 protein and 302.8 calories. And such a delicious and filling breakfast. I will be making these exclusively!

I’ve never tried using sour cream, but I think it should be fine. The batter will be thinner though, so I suggest using 1/4 cup almond flour instead of 2 tablespoons. And you’ll need 1/4 cup of sour cream. Good luck!

They do not. Low carb waffles have different ingredients so it’s hard to replicate regular waffles with what we’ve got to work with. Normal waffle recipes often use flour, cornstarch and buttermilk to make the waffles crispy, but these ingredients are too high in carbohydrate to use in low carb cooking. So, you know, we do what we can with what we have.

I recently discovered the concept of “chaffles” and immediately ordered the well-known “Dash” mini-waffle maker from Amazon. I shredded a bit over two ounces of an aged, semi-hard cheddar cheese from Aldi into a steel mixing bowl with two whole jumbo eggs, your suggested 1/2 teaspoon of baking powder, and approximately 3-1/2 tablespoons of a well-ground almond meal (Trader Joe’s “Just Almond Meal”) before vigorously mixing the lot with a fork — no blender. Nor did I add any oil to the recipe beyond dabbing a bit of saved bacon grease on the hot griddle with a paper towel.
After the waffle maker indicated full heating by turning off that blue LED light at the top, I cautiously poured some of the mixture into the griddle. The first dollop was too much, and the overflow gushed out all over the front as the baking powder sprang into action. LMAO! But after four minutes and some interesting smoke, I unplugged the Dash. Opening the lid revealed a lightly browned concoction that separated easily from the griddle with the smallest urging from a fork. Mmmm. Mmmm! Bready with a distinct cheese flavor and only a hint of egginess!
In short, even my rough and ready adaptation of your excellent recipe come out very nicely! I’m planning on trying the cream cheese version with a touch of vanilla and possibly Walmart’s “Great Value” sugar-free pancake syrup. My mangled version of your recipe would have produced about four mini waffles had I not repeatedly over-poured, which wasted a fair mount of batter. Two more waffles are now crisping up on the counter under a paper towel, awaiting later snacking. 🙂

Ha, thanks so much for the Kind words. I have to say- I always wince when people write in with adaptations of my recipes. When someone changes a recipe and it all goes terribly wrong, I am often the one who gets the blame. So thank you for taking all the responsibility for your waffles! I will have to try the Aldi cheese you mentioned. I am all about ingredients you can buy at Walmart, Trader Joe’s and Aldi. Did you know that you can get almond flour at Aldi now? I was so psyched when I learned that. And I use a very similar sugar-free pancake syrup with my waffles. I actually like it much more than the pricy sugar-free syrups you can buy on Amazon. The one I use is from the “Essentials” brand, which is the generic at my local store.
But anyway, I appreciated your comment very much. When recipes go right, I love to hear about them. And this makes me think that you might like my recipe for broccoli waffles. (I published it back in 2017, before chaffles were even a thing. Not to brag.) Broccoli waffles aren’t for everyone, but you seem like the kind of adventurous eater who might like them.

So glad you like the recipe! And yes, the waffles are very high in calories. When you are doing low carb, eating more calories doesn’t necessarily mean that you will gain weight though. The whole idea behind Keto is to lower carbs and increase fats to lose weight. So if you are trying to gain weight while eating low carb, you should actually increase the amount of protein that you consume, rather than the amount of fat. It is counter to everything that you were taught about dieting, but when you are on a low carb diet, your body plays by different rules. Omg, FINALLY!!! I’ve been looking for a good keto waffle recipe for SO LONG!! Really amazing! I have a low-carb, gluten-free bakery and these are the best I’ve had. I added a 2 teaspoons of Sukrin Gold and a dash of vanilla bean paste then topped with Nature’s Hollow sugar free raspberry syrup and a dallop of swerve confectioners-sweetened whipped cream and everyone raved about the waffle “dessert.” I used 1/4 C almond flour (4T) and got a nice thick batter. I use Madagascar vanilla bean paste. You can buy it on Amazon. I do think it has some sugar in it, but I use less than 1/4 tsp in this recipe so should have minimal affect on blood sugar. I’d think any vanilla flavoring would be almost as good and sugar-free.

This really is the best keto waffle recipe I have tried. I won’t go back to the grainy flax ones again. I made these in my hotel room! I used a blender bottle (be patient – the cream cheese WILL incorporate with just a few small lumps!) and my mini waffle maker. Take that $11 hotel breakfast that wouldn’t be keto anyway! I’ve been using 3 TBSP almond four per recipe (right in the middle) and they have been perfect. If you only used 2 TBSP almond flour, your waffle batter would be pretty runny. It would be great if you were using it to make say, an english muffin replacement in a skillet with the same recipe, but for waffles, 3TBSP of almond flour was perfect for me. Sorry it didn’t work out, this recipe is DELICIOUS! I recommend making 1 single batch first, trying with 3 TBSP of AF, and then see how that does and go from there!

Yes, if you are using 4 tablespoons of almond flour, then it should definitely be as thick as you would expect regular waffle batter to be. But this should be easy to fix. I’d make up a single batch using 4 tablespoons (1/4 cup) almond flour, and then add more almond flour in one tablespoon increments until it reaches a consistency that is thick enough to use in a waffle iron without running everywhere.

The recipe says yield one waffle in the nutrition information for one waffle. I mixed it up as written but got three waffles out of it, I have a mini waffle maker so I’m assuming the nutrition information it’s still the same because it’s just smaller than yours?

Yes, the nutritional info is for 1 large Belgian waffle, or several smaller waffles. The info is the same, not matter how you split up the batter. And this is a large serving, so you might want to only eat half of it.

I’m so confused. All the ratings are awesome, but I had no success with this recipe AT ALL. I quadrupled the recipe to get 4 waffles. I used 8oz cream cheese, 4 tablespoons melted kerrygold, 16 tablespoons almond flour, 2 teaspoons baking soda, and 8 eggs. They turned out terrible. The batter was so runny that it kept pouring out of my waffle iron all over my counter. The waffles turned out thin and not thick or bready at all. I’m so sad….guess I should’ve tried a single waffle first. What could’ve went wrong??

Oh no! Sorry you wasted so many ingredients on this recipe. If the batter was too liquid, then you didn’t use enough almond flour. If you quadrupled the recipe, then you would need to use 1 full cup of super fine almond flour. The only idea I have is that you lost count as you were measuring out 16 tablespoons of the almond flour. I trust you when you say that you used the correct amounts though, so I really don’t know how this happened.

there is no need for me to try another/new recipe for gf/keto waffles…these are really nice, they took 6-7 min in my waffle maker and after removing them out they dried on the surface – got crunchy – and became even more crispy and really fluffy inside,

No, I’m sorry but this recipe needs the cream cheese to work. But you should check out a product called Carbquik. It’s like a low carb Bisquick so it’s great for waffles and pancakes. You can buy it on Amazon here:

You can substitute cream cheese in most recipes with Kite Hill almond based cream cheese spread. It works like a charm in most applications. They also make a plain yogurt that can be subbed for any yogurt or sour cream required in recipes. Kroger stores (many chains fall under the Kroger umbrella) carry it, as do all health food stores.

Thanks for that tip. I keep hearing about low carb things you can buy at Kroger. There is one about 10 miles away from me but I’ve never been there. Are there any other low carb Kroger finds I should look for?

They often have their house brand of cream cheese on sale for 99 cents. I stock up when they have that. I also stock up on their CarbMaster Yogurt, which is sweetened with Sucralose, and usually marked at 50 cents each. It’s a little overly sweet, and low fat, so I solve both of those issues by adding 1T heavy cream to a serving. They carry some Torani SF syrups, if you need any. Boar’s Head meats from their deli are always gluten free, with minimal stuff added in, and good quality. My favorite deli meats! Aidells Chicken & Turkey Meatballs with Sundried Tomatoes, which I don’t find anywhere else. La Choy Soy Sauce (GF), hard to find around here. They have a big selection of flavored waters, both sparkling and still. Louanna Coconut Oil in a good size tub (not so big it won’t fit in my baking cupboard, as I find at Costco) – refined, so no coconut taste. NutPods Non Dairy Creamer, unsweetened — my fave is Vanilla. These should be on the shelf with boxed milks. My “dirty Keto” splurge is Protein Almonds from Optimum Nutrition, in the aisle with protein drinks. They have maltitol, but I only eat 3 at a time — so delicious! If you like those old timey potted meats, they are the only store I know that carris it in Corned Beef (everyone else has only ham and chicken). It’s great on low carb crackers. I find their produce only so-so, and don’t buy much of it there. They often have some sauces, dressings, condiments that I don’t find in other stores. It’s worth taking time to explore.
