Low Carb Keto Yogurt Parfait

I just got back from a vacation to Memphis, Tennessee.

And I'm still hankering for two things I found there:  early Elvis Presley music and those delicious yogurt parfaits that seem only to exist in airports.  Let's talk Elvis first, and then move on to a low carb version of those addictive yogurt parfaits.

I took a tour of Sun Studios and got to hear about Elvis's big break.

He walked into Sun Studios to record a record for his mama's birthday.  Marion Keisker, the woman who recorded him, asked him who he sounded like.  Elvis said, "I don't sound like nobody.".  I love that.  Here he is in one of my all time favorite dance sequences.  (below)  It's from the 1964 hit Viva Las Vegas and it is off the hook.       

But enough tail feather shaking. 

Let's talk about yogurt parfaits.  This recipe was inspired by a sour cream based yogurt that Hey Keto Mama makes.  (A faux-gurt, if you will.)  I made a vanilla flavored version of the yogurt, then layered in berries and topped it with my 10 minute Quick Low Carb Granola.  The result is a very tasty yogurt treat with only 8g net carbs.

Low Carb Keto Yogurt Parfait

Ingredients

yogurt:

  • 1/2 cup sour cream
  • 1 tablespoon heavy whipping cream
  • 1 tablespoon Powdered Swerve or equivalent powdered sweetener
  • 1/4 teaspoon vanilla extract

1/4 cup blueberries and raspberries

2 tablespoons Quick Granola

Instructions

1.  Mix together all yogurt ingredients.

2.  Add half of the berries to the bottom of a glass.  Add half of the yogurt, followed by the remaining berries and yogurt.  Top with granola.
