    Keto Blueberry Breakfast Bars

    Keto blueberry breakfast bars are just the thing if you are looking for a healthy low carb fruit pastry.  And each bar has just 170 calories and 7g net carbs.

    Season’s greetings everybody!

    It’s December 20th as I write this, so I’m doing all the normal holiday things.  Wrapping presents, baking cookies, and getting my hair done to look like a Christmas tree.  Just the usual stuff.

    Irregardless, let’s talk about low carb blueberry breakfast bars.  These healthy breakfast bars have got an almond flour crust, a jammy blueberry filling and a nice low carb crumble topping. They make for easy grab-and-go breakfasts and snacks.

    What do these low carb crumble bars taste like?

    When my husband and I first tasted them, we couldn’t quite put our fingers on what they reminded us of.  Then my husband figured it out: Fig Newtons!  These Keto blueberry bars taste just like regular, high-carb Fig Newtons.  So if you are down with that, then read on and I’ll show you how to make them.

    What are the ingredients of these Fig Newtonish Keto blueberry bars?

    You’ll need almond flour, eggs, butter, and salt for the crust, blueberries, sugar-free sweetener and Xanthan Gum for the filling.  And for the crumble topping, you’ll need almond flour, coconut flour, butter, salt, vanilla, and a sugar-free brown sugar substitute.

    How do you make Keto blueberry breakfast bars?

    First, you mix up the simple, 4 ingredient crust and press it into the bottom of an 8 x 8 inch baking pan and bake it.  Then you simmer the blueberries and sweetener for the filling.  Thicken the blueberry filling with Xanthan Gum and then pour it over the baked crust.  Mix together the crumble topping, sprinkle it over the filling, and then bake it again until it’s browned on top.  And you are done!

    Do you have to use blueberries?

    Nope, any low carb berry will do.  So raspberries, strawberries, and blackberries are all good substitutions.  You can replace them at a 1:1 ratio.

    Any other tips?

    One more thing: adding a dollop of plain yogurt on top gives them a nice tart punch.  They taste just like those yogurt, fruit, and granola parfaits that you see in airports.  Good stuff.

    And that’s about it.

    These bars make a great breakfast, if you are following a low carb or Keto diet, because they are gluten-free and grain-free and have just 7g net carbs per bar.  And they are the perfect thing to bring to holiday parties, just make sure to mark them as having nuts for those with allergies.  

    But enough chit chat, now I must get back to my holiday hair-do.

    Ingredients

    Scale

    crust:

    1 cup almond flour

    2 tablespoons butter, melted

    ¼ teaspoon salt

    1 large egg, beaten

    filling:

    3 cups blueberries, fresh or frozen and thawed

    6 tablespoons Swerve or equivalent granulated sweetener

    1 ½ teaspoons Xanthan Gum

    crumble topping:

    ½ cup super fine almond flour

    3 tablespoons Swerve Brown or equivalent brown sugar substitute

    2 teaspoons coconut flour

    ⅛ teaspoon salt

    ¼ teaspoon vanilla extract

    2 tablespoons butter, melted

    Instructions

    1.  Pre-heat oven to 300 degrees F.  Crisscross two sheets of parchment paper to fit inside an 8 x 8 inch baking pan, so you can lift the bars out of the pan once they have cooled.

    2.  In a medium sized bowl, mix together almond flour, salt and melted butter.  Stir in beaten egg and mix well to combine.

    3.  Press the crust into the bottom of the lined baking pan.

    4.  Bake for 18-20 minutes until just beginning to brown.  Take the crust out of the oven and increase the temperature to 350 degrees F.  

    5.  For the filling, add blueberries and sweetener to a medium sized saucepan and bring to a simmer over Medium High heat.  Lower the heat and simmer until most of the berries have broken down 8 minutes.  Quickly whisk in Xanthan Gum and cook, stirring, until thickened, 1-2 minutes.   

    6.  For the crumble topping, in a medium sized bowl, mix together almond flour, coconut flour, salt, and sweetener.  Stir in vanilla and melted butter and mix until chunks form.  You can use your hands to clump them into larger crumbles, if you'd like.

    7.  Pour filling onto crust.  Sprinkle crumble topping on top.

    8.  Bake at 350 degrees F for 15 - 20 minutes until the crumble topping is browned.

    9.  Allow to cool in the pan for 1 hour before cutting into 9ths.

    Notes

    *If you take these bars to a party, make sure to clearly mark that they contain nuts.  Most people don’t expect a dessert bar to use almond flour, so people with nut allergies might inadvertently eat it.
