    Greetings 👋

    I’ve said it before, and I’ll say it again. Snacks are everything when you are on a low carb diet. And if you don’t have something low carb to nosh on when you are feeling snacky, then you are sunk.

    Take it from me.

    So today I’m going to share a recipe for Keto Honey Roasted Peanuts.

    It’s the kind of snack you would buy at the concession stand at a movie theater. So of course I have the “Let’s All Go to the Lobby” song stuck in my head. I could watch those snacks hotfoot it to the Lobby all day.

    Are peanuts Keto? 🥜

    You may or may not know this, but peanuts are actually not nuts at all. They are legumes that are off-limits if you are on the strictest of Keto diets. But in actuality, you can have a decent amount of peanuts without slipping out of ketosis. The serving size of about 33 peanuts has just 6g net carbs.

    So yes, these are Keto Peanuts.

    These Honey Roasted Keto Peanuts are not, strictly speaking, made from peanuts and honey. I used Swerve Brown to sweeten the nuts. And it worked out great. You’ll have a tasty handful of sweet roasted peanuts with only 3g net carb.

    Keto Honey Roasted Peanuts

    Ingredients 🍯

    • salted roasted peanuts 
    • butter, melted
    • Swerve Brown
    • ground cinnamon
    • vanilla extract
    • Swerve Granular

    Instructions 🧾

    1. Preheat oven to 325 degrees F and cover a cookie sheet with parchment paper.
    2. In a large microwave-safe bowl, melt butter.
    3. Add brown sugar substitute, cinnamon, and vanilla and mix well to combine.
    4. Add peanuts and mix well to coat.
    5. Spread nuts evenly on the parchment-covered cookie sheet.
    6. Sprinkle granulated sweetener over nuts.
    7. Bake for 10-12 minutes, watching closely so that they don’t darken and burn.
    8. Allow to cool on the pan for ½ hour and then break the clumps of peanuts up with your hands.

    And that's all she wrote. 👩‍🍳

    In two shakes of a lamb's tail, you'll have a nice salty Keto snack with only 3g net carbs per serving. It's enough to make you hotfoot to the lobby.

      So far Iv'e made your peanut brittle and honey roasted peanuts. I like both recipes, but the peanut brittle is probably my favorite.

      Peanuts are actually a legume and NOT A NUT, but I'm not on Keto anymore, so I made this recipe anyway. I'm just doing low carb now and was looking for something sweet. Totally hit the spot.

        Very true. There is some dispute over whether peanuts are Keto. Like so many foods, if you are doing strict Keto, you might want to avoid them, but they are probably not going to spike your blood sugar.
