    This low carb recipe is for a fresh Keto Strawberry Pie with only 206 calories and 6g net carbs per slice. It's really refreshing on a hot Summer's day.

    Greetings fruitarians 👋

    It's summertime, here in Pittsburgh, so I just got back from the farmers market. There is a farm that just sells berries, berry pies, and berry jams. They've got these pale white raspberries that I have never seen in stores. And their strawberries are... chef's kiss.

    They are like little candies.

    Are strawberries Keto? 💬

    Yes, they most certainly are. Sliced strawberries have just 5g net carbs per ½ cup serving, so they are one of the few low carb fruits that are acceptable on the Keto diet. Yep, when you are doing Keto, you can eat any berry that you like.

    Farmers market berries are best. 🍓

    That's because grocery store strawberries were picked either in California or Mexico and so they could be over a week old before you buy them. Strawberries are among the most perishable fruits, and they lose a significant amount of flavor within 48 hours of picking. And studies have shown that fruit loses its nutritional value in shipping and on supermarket shelves. The window for fresh strawberries is short though.

    So do what you need to do.

    Ingredients 🥣

    • The crust ingredients are:
    • almond flour
    • melted butter
    • vanilla or plain whey protein powder
    • eggs
    • The filling ingredients are:
    • fresh strawberries
    • Swerve Granular
    • Sugar-Free Strawberry Jello.

    Jello? 🌈

    Yes, you heard that right, Jello. Good old J-E-L-L-O. It's a quick way to get a thick fruity glazed filling, so don't knock it until you've tried it. It is actually really good in Keto Strawberry Pie. These two young men seem to think so.

    Instructions 🧾

    1. Mix together the crust ingredients and press them into the bottom and up the sides of a pie pan. Poke holes in the crust and bake in a 350 degree F oven for 12-15 minutes until browned around the edges. Cool until it reaches room temperature, about 1 hour.
    2. Add sweetener and water to a medium sized saucepan and bring to a boil over medium heat.  Remove from the heat and add in Sugar Free Jello.  Mix well to dissolve.
    3. Mix the Jello with sliced strawberries and pour it into the pie pan. Spread out evenly.
    4. Chill in the refrigerator until set, about 3 hours.

    Whipped cream anyone? 💬

    You can't forget about the whipped cream. You can use the old spray bottle of Reddi Whip if you like because it is actually very low in carbohydrates (1 gram per serving). But you can make your own healthier version in just a few minutes. Just mix together 1 ½ cups heavy whipping cream and 5 tablespoons Confectioners Swerve and whip with an electric mixer until stiff peaks form. Spread it over the top of the pie, or spoon it onto individual slices.

    How to store the pie 🥧

    Just keep the strawberry pie in the fridge. It'll stay good for 4-5 days. Jello stays fresh for up to 10 days in the fridge, but you wouldn't want to push the crust that far. And the pie probably won't last that long. It's pretty gosh darn delicious.

    And that's about it. 👩‍🍳 

    In two shakes of a lamb's tail, you'll have a tasty Keto Strawberry Pie with only 206 calories and 5g net carb per slice.

    Ingredients

    Crust:

    • 1 ¾ cups super fine almond flour*
    • 2 tablespoons butter, melted
    • ¼ cup vanilla or plain whey protein powder
    • 1 large egg

    Filling:

    • 1 ½ pounds strawberries, sliced in half
    • ½ cup Swerve Granular
    • 1 (.3 oz) small box Sugar Free Strawberry Jello
    • 1 cup water

    Whipped Cream (optional)

    • 1 ½ cup heavy whipping cream
    • 5 tablespoons Swerve Confectioners

    Instructions

    Step 1.  Preheat the oven to 350 degrees F.

    Step 2.  Mix the almond flour and whey protein powder together in a medium-sized bowl. Add the egg and melted butter and mix well.

    Step 3.  Press the dough into the bottom and up the side of a glass or ceramic pie pan. Poke holes in the crust with a fork to let out steam.

    Step 4.  Bake for 12-15 minutes until lightly browned around the edges.  Remove from the oven and let it cool to room temperature, about 1 hour.

    Step 5.  Add sweetener and water to a medium-sized saucepan and bring to a boil over medium heat.  Remove from the heat and add in Sugar-Free Jello.  Mix well to dissolve.

    Step 6.  Pour Jello mixture over strawberries and mix well to coat.

    Step 7.  Add strawberries to the pie pan and spread out evenly.

    Step 8.  Chill in the refrigerator until set, about 3 hours.

    Step 9.  (Optional)** Whip together heavy whipping cream and Confectioners Swerve with an electric mixer until stiff peaks form.  Serve on top of or with the pie.

    *If you take this pie to a party, make sure to clearly mark that it contains nuts.  Most people don’t expect a pie to use almond flour, so people with nut allergies might inadvertently eat it.

      I used stevia zero calorie sweetener and my water/sugar never thickened. It stayed runny when I added the Jello. Once I added the strawberries and added it to the pie, the crust absorbed it. How can I make it not so runny?

      Have a question, my glaze gets hard and crystally is that what happens whenough using sugar substitute? Or did I do something wrong, this keto baking is driving me crazy, when I watch you guys it looks so easy.

        Unfortunately, Swerve (erythritol) can crystallize as it cools. I haven’t had it happen to me when I’ve made this recipe, but it can happen.

        I wouldn’t recommend using raw rhubarb because of its natural bitterness. I’ve only ever eaten it cooked with a lot of sweetener.

        I would likely love that but I prefer tart to sweet (and ate rhubarb raw like celery when I was a kid). My recommendation would be to partially cook the rhubarb, add some orange juice, then stir into strawberries.

      I made this in 9 x9 dish without crust. Used 2 boxes of light jello, 2 cups of water and 3/4 cup of sweetner. Delicious 😋

      I have just put the crust in the oven and realized that there was no coconut flour in it. Is this a mistake in your recipe?

        No, this is a crust that only uses almond flour and whey protein powder.
