    Keto Hummus

    This delicious Keto Hummus recipe is made from low carb cauliflower so the carb count is just 2g net carbs per serving. And the good news is that it might even taste better than the original.

    There are no hummus ingredients in this bowl of Keto Hummus.  But trust me, this low carb dip embodies the true essence of hummus.  That makes sense, right?

    Low Carb Keto Curried Cauliflower Hummus

    But is hummus Keto friendly?

    Not at all!  Normal hummus is made from high carb chick peas so the carb count is around 16g per serving.  But the Keto hummus I'm going to show you how to make today is made with cauliflower instead of garbanzo beans so the carb count is just 2g per serving.

    And in place of garlic, lemon and tahini, I used Thai red curry paste. 

    The result is a very convincing Keto Hummus that can go head to head with normal high carb hummus and come out victorious.  Not too shabby for a bowl of fake hummus.

    Not too shabby at all.

    This curried cauliflower hummus is a tasty app with just 43 calories and 2g net carbs per serving.

    Ingredients

    Scale

    32 oz riced cauliflower

    ¼ cup coconut cream

    1 tablespoon red curry paste

    1 tablespoon curry powder

    ½ teaspoon salt

    Instructions

    1.  Add riced cauliflower to a medium sized microwave safe bowl.  Microwave on High for 8 minutes.  Allow to cool in the bowl until it is cool enough to handle.
    2. In two batches, add cauliflower rice to a clean tea towel and wring the water out of the cauliflower.  You should be able to squeeze 1 ½ cups of liquid out.  You'll have 2 cups cooked cauliflower.  Make sure to wash the tea towel the same day you use it or it will get very stinky.
    3. Add all ingredients to a food processor or high powered blender and process until smooth and completely combined.
    4. Serve with cucumbers, carrots, celery, tomatoes, etc.

      Great idea to use cauliflower instead of chickpeas and I can imagine how flavourful this dip is with those thai flavours of coconut milk and red curry paste!

      I sure love my hummus and my chickpeas but I'd definitely be down for trying it made with cauliflower. Very creative! Love the idea of a curry flavor too! 🙂
