    This Keto Marzipan recipe has got just 2g net carbs per serving. It's a great healthy take on a classic Italian bakery treat.

    Low Carb Keto Chocolate Drizzled MarzipanThere are some things that I've really been missing, since we moved from Brooklyn.

    And one of those things is the Italian bakeries.  The kind were old men sit around drinking espresso and eating cannoli.  And where you can find beautifully prepared marzipan treats made in the shape of animals, fruits and vegetables.  So good.

    Low Carb Keto Chocoalet Drizzled Marzipan

    Well, the good news is that you can make your own Keto marzipan at home.

    The bad news is that I am not quite talented enough to pull off forming the marzipan into cute little animal shapes. 

    We'll just have to make do with ball shapes. 

    But we can dye them in fun colors and drizzle them with chocolate so there is that.  These Keto marzipan treats are full of almondy goodness and only have 2g net carbs each.  So relax with an espresso and a piece of marzipan.

    And you'll almost feel like you are in Brooklyn.

    Ingredients

    Scale

    Marzipan:

    1 ½ cup raw slivered almonds

    ¼ cup Confectioner's Swerve or equivalent powdered sweetener*

    ¼ cup cold butter, roughly chopped

    ½ teaspoon almond extract

    food coloring, if desired

    Chocolate Topping:

    1 tablespoon Lily’s Sugar-Free Chocolate Chips or equivalent

    ¼ teaspoon coconut oil

    1 teaspoon Confectioner's Swerve or equivalent powdered sweetener

    Instructions

    1. Add all Marzipan ingredients to a blender or food processor and blend until it forms a paste that can be rolled into a ball, 3-4 minutes.
    2. Use the palms of your hands to roll the marzipan into 8 equal sized balls.
    3. Add Chocolate Topping chocolate chips and coconut oil to a small microwave safe bowl.  Microwave in 30 second increments until melted and combined, stirring after each 30 seconds.
    4. Drizzle chocolate over marzipan balls.  Allow chocolate to harden before serving.

    Notes

    *Any sweetener can be made into powder by blending it in a blender.

      Baking at Christmas is one of my favorite memories. I remember the year my mom decided on marzipan. We had so much fun making apples, oranges, and so many other fun shapes, coloring with little paintbrushes and food coloring. Our neighbors always looked forward to our Christmas plate, and they all loved these. (Peanut brittle was always included, and about 4 types of cookies.) So many of our recipes are tied to memories.
