I’m just noshing on some low carb Keto lemon lime bites and watching Jimmy Kimmel. He’s got this segment where celebrities read texts from their mothers. (below) It’s really funny.
There are some classic mom texts in there.
I love that Anna Farris’s mom was texting her at 3:45 am to remind her to wear more sun screen. It is the exact thing you worry about at 3 in the morning. That and Lyme’s Disease. Yep, I’ve definitely been that mom.
But let’s talk about my Mother’s Day treat.
These low carb Keto lemon lime bites turned out really well. They are based on a recipe for Keto Lemon Coconut Balls that I found on Mouthwatering Motivation. These dessert bites taste like little mini cheesecakes. They’ve got a subtle citrus flavor and a smooth creamy texture.
They made for the perfect Mother’s Day treat.
Low Carb Keto No Bake Lemon Lime Bites
These low carb lemon lime bites make for the perfect dessert or fat bomb.

3 oz cream cheese
1 teaspoon full fat sour cream
2 teaspoons fresh lemon juice
2 teaspoons lemon zest
1 teaspoon fresh lime juice
1 teaspoon lime zest
1/2 cup plus 2 tablespoons super fine almond flour
3 tablespoons Swerve or equivalent granulated sweetener
1/2 teaspoon vanilla extract
2 tablespoons unsweetened shredded coconut
1/2 tablespoon Swerve or equivalent granulated sweetener
1. Add all dough ball ingredients to a medium sized bowl and mix well to combine.
2. Freeze the dough for 10 min.
3. Mix coconut and sweetener on a small plate or bowl.
4. Remove the dough from the freezer and roll it into 6 small balls that have 2 tablespoons each.
