Yesterday my husband and I went out for Mexican food, so I spent the whole ride over girding myself for all the temptations I would soon be surrounded by. Chips and salsa. Chips and guac. Tortillas. Tamales. I’m sure you’ve been to a Mexican restaurant while eating low carb, so you know what I am talking about.
I was like, YES!
And they made what looked like an epic queso appetizer. I ordered their Keto queso and it did not disappoint. A guy came out with one of those sizzle plates they use for table-side fajitas. And he did this whole performance where he cooked the vegetables and then poured in the Keto cheese sauce and had it boil and bubble over the edge of the pan. It was a whole thing. And honest to god, this was, the best queso I have ever had.
Hands down.
And the Keto queso came with pork rinds to dip into the cheese sauce.
I’ll admit, I have never been a big fan of pork rinds. But as a vehicle to scoop up Keto queso cheese sauce, they were perfect. You can also eat the queso with cauliflower, broccoli, sliced bell peppers, or celery sticks.
But let’s not kid ourselves, pork rinds are the only way to go.
All of which brings me to today’s recipe for quick Keto queso.
It may not have the drama of the restaurant queso, but it’s just as Keto and just as tasty. It’s an app that you can literally throw together in 5 minutes and each serving has just 2g net carbs.
🥣 Ingredients
You only need these three things to make Keto queso at home: heavy whipping cream, shredded cheese, and a can of diced tomatoes with green chilies.
🧀 The cheese
You can freestyle it a bit with the cheese. I tend to use Sharp Cheddar but Pepper Jack, Colby, American, and Mexican Blend will all work for this Keto queso.
📖 Instructions
Drain the can of tomatoes and chilies.
Add cream to a medium-sized saucepan and bring to a boil over Medium heat.
Add shredded cheese to the pan and cook until melted, stirring constantly.
Mix the tomatoes and chilies into the cheese sauce.
This cheese sauce comes together in 5 minutes flat.
And then you’ll have this great cheesy Keto queso to scoop up with zero-carb pork rinds. So, many thanks to the Mexican restaurant with their heaven-sent Keto menu.

- 10 oz can of diced tomatoes with green chilies
