Today I’m going to share a low carb twist on the classic loaded potato casserole. But instead of potatoes we’ll be using…drum roll please…cauliflower.
Yes, cauliflower.
When you are on a low carb diet, cauliflower is your new best friend. And like any life long relationship, sometimes you are friends and sometimes you are frenemies. But you do best when you and cauliflower are on good terms.
💪 Why is cauliflower so healthy?
This nutrient dense cruciferous vegetable has a lot going for it. Cauliflower contains natural substances that protect the bends and branches of your blood vessels, giving you good heart protection. The high fiber content helps with regularity and aids in weight loss. And it has anti-aging properties and can even help you detox.
🥔 Faux-tatoes anyone?
Twice Baked Cauliflower is made just like twice baked potatoes. And this recipe is so good, you will barely register the difference between the two. Load the cauliflower up with sour cream, cheddar cheese and bacon and these “faux-tatoes” will knock your socks off.
🥣 Ingredients
- cauliflower florets
- cream cheese
- sour cream
- scallions
- bacon
- sharp cheddar cheese
- fresh parsley

📖 Instructions
- Preheat oven to 350 degrees F and spray an 8 x 11 inch or 9 x 9 inch pan with cooking spray.
- Add cauliflower florets to a microwave safe bowl and add a ½ inch of water. Cover loosely with plastic wrap and microwave for 7 minutes on High. Drain well.
- Add cauliflower, cream cheese, salt, pepper and sour cream to a blender and blend until smooth.
- Fold in ¼ cup of cheddar cheese, parsley, ¾ of the scallions, and ⅔ of crumbled bacon bits.
- Add mixture to the prepared pan. Sprinkle with remaining cheddar cheese, bacon and scallions. Loosely cover with a piece of tin foil and bake for 25 minutes. Remove the tin foil and bake about 10 minutes more, or until the cheese is slightly browned.
In less than an hour, you’ll have a creamy, salty Twice Baked Cauliflower Casserole with just 269 calories and 6g net carbs per serving.

- 6 slices crisp bacon, crumbled
