The secret to this salad is mozzarella di buffala, better known as buffalo mozzarella cheese. It’s a very soft Italian cheese made from the milk of water buffalos. (Try to put that fact out of your mind. Trust me, it’s fabulous.)
Is this a caprese salad?
Well, you might call it a poor man’s caprese salad. Classic caprese salads have fresh mozzarella, tomatoes, basil, olive oil and a balsamic reduction. But this is not for us. Not today with the fussy balsamic reduction.

Glad you asked. You slice the grape tomatoes in half lengthwise, nestle the buffala di mozzarella cheese balls on top and drizzle it all with olive oil. Sprinkle with salt, pepper and basil and serve.

2 cups grape tomatoes, sliced lengthwise
2 balls buffalo mozzarella
2 tablespoons basil, chopped
