    Hello, cheese balls 👋

    Today I’m going to show you how to make Collie dogs out of cauliflower and broccoli florets.  Cauli dogs, if you will.  I’m just kidding, I’m actually going to share my recipe for Buffalo Mozzarella Salad, the easiest salad in the whole world.

    🐃 What is buffalo mozzarella?

    The secret to this salad is mozzarella di buffala, better known as buffalo mozzarella cheese.  It’s a very soft Italian cheese made from the milk of water buffalos.  (Try to put that fact out of your mind.  Trust me, it’s fabulous.)

    💬 Is this a Caprese salad?

    Well, you might call it a poor man’s Caprese salad.  Classic Caprese salads have fresh mozzarella, tomatoes, basil, olive oil, and a balsamic reduction.  But this is not for us.  Not today with the fussy balsamic reduction. No, this buffalo mozzarella salad has just four ingredients.

    🍅 Ingredients

    • buffalo mozzarella
    • basil
    • grape tomatoes
    • olive oil

    💬 Is this salad Keto?

    Have no fear, it is definitely Keto.  The total net carb count for one serving is just 1g, so if you are on a low carb diet, you can enjoy this salad with confidence.

    📖 Instructions

    1. Slice the tomatoes and chop the basil.
    2. Add tomatoes to a serving plate and nestle buffalo mozzarella balls on top.
    3. Sprinkle with basil, salt & pepper.
    4. Drizzle with olive oil.
