    🍫 Greetings chocolate lovers

    If you have made your way to this website, then you are looking to make some Keto chocolates, also known as "fat bombs". Well, I am here to give them to you. Just think of me as the Willy Wonka to your Charlie Bucket. We are about to make some wonderful chocolate together.

    That reminds me of one of the great mysteries of my childhood.  In the original Charlie and the Chocolate Factory, why did the chocolate river look like orange water? It looked like no melted chocolate that I had ever seen. 

    It confounds me to this day. 🤔

    But sugar-free chocolates, let’s make some! 😁

    🥣 Ingredients

    All you need is a bag of sugar-free baking chips or candy bars. I don't recommend using dark chocolate chips or bars because they make hard and very bitter chocolate candies. Maybe that is your thing, but you should know that there are plenty of other sugar-free chocolate options

    There are several brands that make sugar-free chocolate chips and bars, but Lily’s is by far the most prolific. They make a ridiculous amount of flavors. It is an embarrassment of riches, frankly.

    These baking chip flavors work best for making Keto chocolates:

    • Milk Chocolate 
    • Semi-Sweet Chocolate
    • White Chocolate
    • Chocolate Salted Caramel 
    • Butterscotch
    • Chocolate Mint
    • Pumpkin Spice
    • Peppermint
    • and Unicorn... Swirl? Unicorn Swirl baking chips might sound a bit loosey-goosey but are actually really fun. These blue and pink chips made of white chocolate turn a whimsical purple color when you melt them together.

    And these chocolate bar flavors work best:

    • Milk Chocolate Bars:  Creamy Milk Chocolate, Salted Almond, Salted Caramel, Hazelnut
    • White Chocolate Bars:  Original White Chocolate, Birthday Cake, Cookies and Creme, Peppermint, Gingerbread
    • Just use a chef's knife to break the bar up into pieces before melting.

    🥜 Nuts for coconut  

    Adding in shredded coconut or chopped nuts can be kicky.  Just sprinkle a little bit on top of the chocolates and press it in before the chocolate hardens. If you are not crazy for nuts, then that's ok too. The Keto chocolates are great on their own. (No ifs, no buts, no coconuts.) 🥥

    📖 Instructions

    1. Place a rubber candy mold on a baking sheet and make room for it in your freezer. You may need to move that bag of frozen broccoli that you are never going to eat. Popsicles make great levelers too.
    2. Dig out your double boiler, or make one out of a saucepan and a heatproof bowl. Fill the saucepan halfway full of water and bring it to a simmer. Lower the heat to low and maintain a simmer. Keep checking as you cook to ensure that the water is still at a simmer and hasn’t risen to a boil. Use a potholder to hold the bowl as you stir. It gets hot!
    3. Add baking chips or chopped bars to the bowl and stir constantly until melted. Use a rubber spatula, and scrape up the chocolate as you stir. Melt just until you can’t see the individual chips or pieces anymore. It will be thick and slow to pour.
    4. Use the rubber spatula to help pour the chocolate into the wells of the mold. No need to be fussy about filling each well perfectly to the top. Overfill the wells a little and then use the flat side of the spatula to level the excess off.  
    5. If using shredded coconut or chopped nuts, don’t fill the wells all the way to the top. Sprinkle the coconut or nuts over the chocolate and gently push them in a little. Or if you want the coconut or nuts on top, sprinkle the bottom of the wells with them before pouring in the chocolate.
    6. Freeze for 30 minutes.
    7. To unmold the chocolate, push on the bottom of each well until the chocolates pop out.
    8. The chocolates can be stored in an airtight container at room temperature or in the refrigerator. They will stay fresh for 2-3 weeks.

    🫕 What is a double boiler?

    A double boiler is a kind of saucepan with an upper and lower compartment.  You use double boilers to melt chocolate and heat sauces slowly and evenly. You probably won’t have one unless you happen to be a housewife living in the 1950s though.    

    But you can MacGyver your own double boiler and use it to make these Keto chocolates. Like I said earlier, just find a medium-size saucepan and place a glass or metal bowl on top. That's all there is to a double boiler.

    💣 What is a fat bomb?

    Fat bombs are one of those Keto slang words like "dirty Keto" that kind of gross me out a little. But the idea is solid. When you are on a Keto diet, you are always looking for creative ways to get a little more fat into your diet. That is because, when you drastically restrict the carbs in your diet, your body begins burning fat for fuel. You become a lean mean fat-burning machine.

    🍫 Is dark chocolate Keto?

    Dark chocolate has fewer carbs than milk chocolate, but you need to watch for sugar. If it contains sugar then it isn't so Keto. I do not recommend using dark chocolate chips for this recipe because they are very bitter. But if you want dark chocolate, Lily's makes a semi-sweet chocolate chip that is plenty dark and plenty sweet.

    💧 Water is your frenemy

    While you need simmering water to melt the chocolate, you definitely don’t want it to touch your chocolate. Water will make it seize up, so it must be avoided at all costs. It’s a good idea to wipe off the bowl of the double boiler after you’ve used it so that the condensation doesn’t make its way into the chocolate accidentally.

    ♨️ Simmer down

    I want to stress this point: make sure that the water is just simmering, not full-on boiling. This is very important. If the chocolate cooks too fast, it will harden and won’t melt anymore. You will have wasted some expensive sugar-free chocolate chips if that happens. 

    If you check and see that your water is getting too hot, just turn down the temperature, take the bowl off the heat, and keep stirring the chocolate as you wait for the water to go back down to a simmer.

    Soon you’ll be noshing on some delightful low carb chocolate candies with just 2g net carbs and 60 calories each. It only takes 5 minutes to cook and prep the chocolate and then you just need to sit on your hands for half an hour waiting for the chocolate to harden. But that's ok, you can use the time to ponder the eternal question: why was Willy Wonka’s chocolate river so thin and so orange?

    Notes

    White chocolate, milk chocolate, semi-sweet chocolate, and flavored baking chips work best.
