    Keto Panna Cotta with Raspberry Sauce

    This Keto Panna Cotta recipe is a low carb take on a classic Italian dessert.  It only takes 10 minutes to make and has just 5g net carbs per serving.

    I hope you are doing well.  But even if you aren’t, I’ve got a low carb dessert recipe that will cheer you right up.  It’s called Panna Cotta and it Is to die for.

    What is Panna Cotta?

    Panna Cotta is a simple Northern Italian dessert that literally means "cooked cream". It is made from a combination of cream, sugar and gelatin.  The earliest recipes for Panna Cotta used simmered fish bones to get the collagen needed for it to gel.  (Ew!)  But the Keto Panna Cotta we'll make today just uses powdered gelatin.  (Phew!  That's better.)

    Is Panna Cotta Keto?

    Traditional Panna Cotta contains cane sugar so you can't eat it on a Keto diet.  But the low carb version I am going to share with you today uses zero net carb erythritol so it is quite decidedly Keto.

    What’s in Keto Panna Cotta?

    The ingredients of this low carb Italian treat are: unflavored gelatin, heavy whipping cream, canned coconut milk, erythritol sweetener and vanilla extract.  And the low carb raspberry sauce contains: fresh raspberries, erythritol and chia seeds.

    How do you make Keto Panna Cotta?

    First, you soften the unflavored gelatin in cold water.  Meanwhile, you combine the heavy whipping cream, coconut milk and sweetener and heat it on the stove.  Then stir in vanilla extract and mix until combined.  You let the mixture cool for a few minutes and then pour it into 4 glasses or custard cups and chill them in the refrigerator for 2 hours. For the raspberry sauce, you add the raspberries and some water to a sauce pan and simmer them for 5 minutes.  Remove it from heat and stir in sweetener and chia seeds.  Refrigerate the sauce for 2 hours.  Then you top the Panna Cotta with the raspberry sauce and serve.

    How long does it take to make this low carb Panna Cotta?

    The prep time is just 20 minutes and the chill time is 2 hours.  It’s a no-bake dessert, so it’s much easier to throw together than other Keto desserts I could mention.

    And that’s everything I can tell you about Keto Panna Cotta with Raspberry Sauce.

    It’s a fabulous Italian dessert that takes 10 minutes to cook and has just 352 calories and 5g net carbs.

    Ingredients

    Scale

    panna cotta:

    • 1 envelope (2 ½ teaspoons) Knox unflavored gelatine
    • ¼ cup cold water
    • 1 cup heavy whipping cream
    • 1 cup canned coconut milk
    • ¼ cup Swerve or equivalent granulated sweetener
    • ½ teaspoon vanilla extract

    raspberry jam

    • 1 cup fresh or frozen raspberries
    • 1 tablespoon water
    • 3 tablespoons Swerve or equivalent granulated sweetener
    • 1 tablespoon chia seeds

    Instructions

    1.  Pour unfavored gelatin over a small bowl with ¼ cup cold water.  Allow to soften for at least 5 minutes.

    2.  Meanwhile, combine cream, coconut milk and sweetener in a medium sized saucepan.  Heat it up over medium heat until hot but not boiling.

    3.  Stir softened gelatin into the hot cream mixture and stir until fully dissolved.  Stir in vanilla extract.

    4.  Allow to cool in the pan for 15 minutes.

    5.  Pour the liquid into 4 glasses or custard cups and chill in the refrigerator for 2 hours.

    6.  Add raspberries and 1 tablespoon water to a medium sized sauce pan and bring to a boil over medium heat.  Lower heat and simmer for 5 minutes.

    7.  Remove from heat and stir in sweetener and chia seeds.  Test for sweetness and add more sweetener if desired.  Refrigerate for 2 hours.

    8.  Top panna cotta with raspberry jam and serve.
