These waffles could go head to head with any waffle, any time, any place. They could throw down with IHOP and come out the victor. No question. These low carb waffles are better than those pitiful excuses for waffles because they have just 5g net carbs and a whopping 19 grams of protein. And they taste like a million bucks!
So let me show you how I make this Keto Waffle recipe.

🥣 Ingredients
Waffles tend to be nutritional wastelands. Lots of sugar and white flour and not much else. But check out the ingredients in my Keto Waffles:
- eggs
- cream cheese
- baking powder
- coconut oil or melted butter
- almond flour
This is real food, people!
And did I mention that it also makes the World's Greatest Low Carb Pancakes? Well, it does. Best Keto waffles and pancakes ever. Just leave out the oil or melted butter.

🍯 Sugar-Free Syrup
You've got two schools of thought on this one. You can buy fancy Keto friendly sugar-free maple syrup in specialty stores and on Amazon if you like. Or you can go the low-brow route and buy the sugar-free syrup you can find in the pancake aisle of the supermarket. No judgment.

🔪 Equipment
You need two appliances: a blender and a waffle iron. The recipe was developed to make one large Belgian waffle, but the batter will make 2-3 regular-sized waffles, depending on how big your waffle iron is. It will also work with mini waffles, for added cuteness.

🍚 Almond flour
The more almond flour you use, the thicker the waffle. If you are doing strict 20 grams of carbohydrate a day Keto, then you are going to want to stick to 2 TB of almond flour. This waffle will be perfectly adequate but on the thin side. Using 3 TB makes a thicker waffle. And you can make a very thick waffle by using 4 TB of almond flour. The carb count will be from 5-7g net carbs depending on which one you choose.
📖 Instructions
- Spray the waffle iron with cooking spray and pre-heat.
- Add all wet ingredients to a blender. Then add all dry ingredients.
- Blend until smooth, scraping down the sides once, for 30-60 seconds.
- Pour the batter into the hot Belgian, regular or mini size waffle iron, and cook according to manufacturer's instructions, usually 3-4 minutes.
- To make a double batch, click on the button that says "2X" to the right of the ingredients in the recipe card. Then cook the batter in two batches.
- Storage: Makes a great meal prep low carb breakfast. Store in an airtight container in the refrigerator for up to a week. It's best to reheat the Keto waffles in a toaster oven.

Ingredients
- 2 large eggs
- 2 oz cream cheese
- 2 - 4 tablespoons almond flour*

Instructions
Step 1. Spray the waffle iron with cooking spray and pre-heat.
Step 2. Add all ingredients to a blender. Then add the dry ingredients.

Notes
*For thicker, breadier waffles, add 1-2 tablespoons more almond flour to the 2 tablespoons in the recipe. If you add 1 tablespoon more, then the net carbs are 6g. If you add 2 tablespoons more, then the net carbs are 7g.
**Omit oil if using for pancake batter.

🎃 Pumpkin Waffles
To make these Waffles more autumn-y, you can add ½ tsp pumpkin spice, 2 TB pumpkin puree and 2 TB of sugar-free sweetener.

Hello! I’m yet to try this recipe. Can I use sour cream instead of cream cheese? Trying to use what I have at hand.

I've never tried using sour cream, but I think it should be fine. The batter will be thinner though, so I suggest using 1/4 cup almond flour instead of 2 tablespoons. And you'll need 1/4 cup of sour cream. Good luck!

They do not. Low carb waffles have different ingredients so it's hard to replicate regular waffles with what we've got to work with. Normal waffle recipes often use flour, cornstarch and buttermilk to make the waffles crispy, but these ingredients are too high in carbohydrate to use in low carb cooking. So, you know, we do what we can with what we have.

Thank you for this recipe! Just made it and it couldn’t haven’t been easier and it was very tasty! I used my ninja single serve cup to blend, added sf vanilla extract and a little cinnamon. Ate it warm with butter and sf syrup. Yum yum!! I followed your advice and cut the belgium waffle in half. I imagine it will be even better after being toasted for left overs. Thanks again!

No problem! I haven't tried freezing them and then toasting them, but someone else in the comment thread did it and it worked out really well. Adding vanilla and cinnamon was a good idea. If you are using baking soda, then you are doing it wrong. You need to use baking powder.

I recently discovered the concept of "chaffles" and immediately ordered the well-known "Dash" mini-waffle maker from Amazon. I shredded a bit over two ounces of an aged, semi-hard cheddar cheese from Aldi into a steel mixing bowl with two whole jumbo eggs, your suggested 1/2 teaspoon of baking powder, and approximately 3-1/2 tablespoons of a well-ground almond meal (Trader Joe's "Just Almond Meal") before vigorously mixing the lot with a fork — no blender. Nor did I add any oil to the recipe beyond dabbing a bit of saved bacon grease on the hot griddle with a paper towel.
After the waffle maker indicated full heating by turning off that blue LED light at the top, I cautiously poured some of the mixture into the griddle. The first dollop was too much, and the overflow gushed out all over the front as the baking powder sprang into action. LMAO! But after four minutes and some interesting smoke, I unplugged the Dash. Opening the lid revealed a lightly browned concoction that separated easily from the griddle with the smallest urging from a fork. Mmmm. Mmmm! Bready with a distinct cheese flavor and only a hint of egginess!
In short, even my rough and ready adaptation of your excellent recipe come out very nicely! I'm planning on trying the cream cheese version with a touch of vanilla and possibly Walmart's "Great Value" sugar-free pancake syrup. My mangled version of your recipe would have produced about four mini waffles had I not repeatedly over-poured, which wasted a fair mount of batter. Two more waffles are now crisping up on the counter under a paper towel, awaiting later snacking. 🙂

Ha, thanks so much for the Kind words. I have to say- I always wince when people write in with adaptations of my recipes. When someone changes a recipe and it all goes terribly wrong, I am often the one who gets the blame. So thank you for taking all the responsibility for your waffles! I will have to try the Aldi cheese you mentioned. I am all about ingredients you can buy at Walmart, Trader Joe's and Aldi. Did you know that you can get almond flour at Aldi now? I was so psyched when I learned that. And I use a very similar sugar-free pancake syrup with my waffles. I actually like it much more than the pricy sugar-free syrups you can buy on Amazon. The one I use is from the "Essentials" brand, which is the generic at my local store.
But anyway, I appreciated your comment very much. When recipes go right, I love to hear about them. And this makes me think that you might like my recipe for broccoli waffles. (I published it back in 2017, before chaffles were even a thing. Not to brag.) Broccoli waffles aren't for everyone, but you seem like the kind of adventurous eater who might like them.

So glad you like the recipe! And yes, the waffles are very high in calories. When you are doing low carb, eating more calories doesn’t necessarily mean that you will gain weight though. The whole idea behind Keto is to lower carbs and increase fats to lose weight. So if you are trying to gain weight while eating low carb, you should actually increase the amount of protein that you consume, rather than the amount of fat. It is counter to everything that you were taught about dieting, but when you are on a low carb diet, your body plays by different rules. Omg, FINALLY!!! I've been looking for a good keto waffle recipe for SO LONG!! Just yesterday I tried one with 3 times the amount of ingredients that had me folding in peaked eggwhites and using every bowl and utensil I had and all I had at the end was waffle-shaped cardboard and a trashed kitchen... Would it be possible to use coconut flour instead of almond flour?

That's definitely a good idea if you plan to do any kind of low carb baking. But luckily, I've seen a large 3 lb bag of almond flour at Costco, and Aldi just started to carry it too. And, obviously, you've got your choice of brands on Amazon.
