Today I’ve got a Keto tomato soup recipe to share with you. It’s a copycat version of the classic Campbell’s Condensed Tomato Soup. My Keto version is pretty darn close to the original.

But before we get to the recipe...
I've got a bone to pick with the Campbell's Tomato Soup advertisements. Growing up in the ’80s, the Campbell’s Soup catchphrase was “Soup is Good Food”. But I ask you, was "good" really the best thing they could say about their soup? Was it the best soup or even a great soup? No, it was just good soup. I truly don’t get it.
Let’s move on. 🤷♀️

In the soup 🥣
The Keto tomato soup that we’re making today is better than good, it’s great! It’s made from just vegetables, broth, and cream so it has only got 4g net carbs per cup. Compare that to Campbell’s Tomato Soup which has 43g. So... no contest.

- onions
- tomatoes
- vegetable broth
- tomato paste
- Swerve
- salt
- black pepper
- heavy whipping cream

Instructions 💬
- Heat olive oil in a dutch oven or soup pot over medium heat.
- Add onions and cook until softened, 5 minutes.
- Add broth, tomatoes, tomato paste, sweetener, salt, and pepper to the pan and bring to a low boil. Lower the heat and simmer for 30 minutes.
- Add soup to a blender and blend until smooth.
- Return to the pan, add cream and mix well.

- ½ cup onions, diced
- 1 pound unpeeled tomatoes, diced

Oh, I like Allulose too. I tend to use Swerve, but not always. It can crystallize when it's heated, so I use Allulose for candy.

You know what, HighKey makes some almond flour crackers that are very good. And if you are doing low carb rather than Keto, I like to eat Wasa Light Rye crackers which have 6g net carbs for each large cracker.

Mmmm, mmmm, Good!!! This soup is excellent, so much better than anything you could get out of a can. Even my non-soup-eating husband loves it! The only thing I did different from the recipe was to add about 1/2 tsp of garlic powder and a few shredded basil leaves from my garden. This is definitely a keeper! Thanks for sharing your recipe!!!

I added sweetener because Campbell's Tomato Soup is very sweet. It is also to counteract the acidity of the tomatoes. It's fine to skip it, but it does balance the flavor of the tomato soup.

I’ve made this twice now. Living in North Dakota, tomatoes aren’t always great in the off seasons here. So I just use two cans of organic diced tomatoes. (I usually double the recipe too) I do tend to add only 4T of the swerve bc canned tomatoes seem to have a lot of sweetness too! I like to top it with basil and eat all night! Lol thank you for this

I recently started keto and it was looking for a comfort inn tomato soup recipe so I was excited when I came across this one. It definitely is a lot more work than opening a can of Campbell's but I know that the end product is way better for me which makes it entirely worth it! I do prefer a creamier tomato soup so I doubled the heavy whipping cream. Additionally I added a tablespoon of butter at the end for a little more richness (I used to dunk buttered crackers into my tomato soup and always enjoyed the buttery flavor that they left behind). It was a pretty good substitute although next time I think I will add a little bit of garlic powder and see if that rounds out the flavor a little bit more. Thanks 😊
