Today I’ve got a Keto tomato soup recipe to share with you. It’s a copycat version of the classic Campbell’s Condensed Tomato Soup. My Keto version is pretty darn close to the original.

But before we get to the recipe...
I've got a bone to pick with the Campbell's Tomato Soup advertisements. Growing up in the ’80s, the Campbell’s Soup catchphrase was “Soup is Good Food”. But I ask you, was "good" really the best thing they could say about their soup? Was it the best soup or even a great soup? No, it was just good soup. I truly don’t get it.
Let’s move on. 🤷♀️
In the soup 🥣
The Keto tomato soup that we’re making today is better than good, it’s great! It’s made from just vegetables, broth, and cream so it has only got 4g net carbs per cup. Compare that to Campbell’s Tomato Soup which has 43g. So... no contest.
Ingredients 🍅
- olive oil
- onions
- tomatoes
- vegetable broth
- tomato paste
- Swerve
- salt
- black pepper
- heavy whipping cream

Instructions 💬
- Heat olive oil in a dutch oven or soup pot over medium heat.
- Add onions and cook until softened, 5 minutes.
- Add broth, tomatoes, tomato paste, sweetener, salt, and pepper to the pan and bring to a low boil. Lower the heat and simmer for 30 minutes.
- Add soup to a blender and blend until smooth.
- Return to the pan, add cream and mix well.

The simple ingredients make the soup Low Carb, Keto, Vegetarian, and Low-Calorie. But how low in calories? How do 86 calories sound to you? Campbell's Tomato Soup has 329 calories and our much healthier tomato soup has just 86. Because you know what?

- 1 tablespoon olive oil
- ½ cup onions, diced
- 1 pound unpeeled tomatoes, diced
- 4 cups vegetable broth
- 3 tablespoons tomato paste
- 3 tablespoons Swerve Granular
- 1 ½ teaspoons salt
- ¼ teaspoon black pepper
- ¼ cup heavy whipping cream

Easy to make. I only used 2 tbsp on sweetner and it was way to sweet. Ended of adding more stuff to it. I will make again, but add sweetner at the end, if at all.

Super simple and tasty. I added red bell peper and celery to augment the onions. A can of fire roasted (low salt if you can find them) added just before serving would put this soup over the top! (I do this with canned tomato soup just to add some texture.)

In the dead of winter in Michigan. No good tomatoes here. How would this work with home canned Romas? How many do you think it would take?

I hear you. I think that canned Romas should be fine in this recipe. One pound tomatoes works out to about 3 cups puréed tomatoes. So just eyeball 3 cups of the Romas and I think you’ll be good.
