    Greetings y'all 👋

This morning I made myself some Keto cheese grits and eggs, so obviously I’ve been thinking about the 80’s show Alice. Remember the sassy waitress named Flo?  The one whose catchphrase was “Kiss my grits!”.

    She was a hoot.

    Flo from Mel's Diner

But low carb Southern cheese grits, let’s talk about it.

I’m not Southern, but I do have a long history of loving cheese grits.  I used to eat them in this great brunch place in the West Village called Cowgirl.  Add some crisp bacon and a runny egg on top and you were in cowgirl heaven.

💬 But what are the carbs in grits?

Normal grits are made from cornmeal and have an average of 30g net carbs per serving. Not great. They are made from cornmeal, so they aren't even a little bit Keto. No point trying to put lipstick on a pig. Grits are very unfriendly to low carb dieters.

💬 So how are these cheese grits Keto?

We are going to use low carb almond flour in place of cornmeal in this Keto cheese grits recipe, so our version has just 3g net carbs.  Muuuuuuch better. Phew!

a hand sprinkles cheddar cheese on gluten free cheese grits

    🥣 Ingredients

This recipe has just three ingredients:

    • almond flour
    • water
    • cheese
    ingredients of Keto cheese grits

But these Keto cheese grits can be as dressed up or as dressed down as you like.

    🍳 Low Carb Additions

    • Proteins:  Eggs, Bacon, Sausage, Pulled Pork, Cajun Shrimp
    • Vegetables:  Green Onions, Cherry Tomatoes, Spinach, Pico de Gallo, Avocado, Jalepeno Peppers, Garlic
    • Cheeses:  Cheddar, Colby, Goat, Manchega, Parmesan
    toppings

    📖 Instructions

    1. Add 1 cup almond flour, 1 cup water and ½ teaspoon salt to a sauce pan.
    2. Bring the mixture to a boil and simmer for 1-2 minutes.
    3. Stir in ½ cup shredded sharp cheddar cheese and mix to melt and combine.

And that’s all she wrote. 👵

In less and 10 minutes, you’ll have a cheesy, creamy bowl of Keto cheese grits with only 217 calories and 3g net carb.   Add a few eggs and you’ve got the perfect low carb breakfast or brunch. Now I know that there are Keto diet naysayers out there.

But for them, I have just three words: Kiss. My. Grits. 😁

I have made this several times now and finally got around to commenting. I love this, even the hubby loves this! I have served it with blackened shrimp, bacon, cajun chicken, and spicy sausage. Always fabulous!! Thanks for a great recipe.

I really wanted this to be a hit, but the grainy texture I couldn’t get past 🙁 I’m not giving up, however, and will play around with this one. Thank you for this recipe!

I am so happy to be able to eat grits again!!. I added a 1/2 teaspoon of corn extract to mine so it really tasted like the real thing. Thanks for this recipe!

Oh, adding corn extract is a great idea. I have some leftover from a cornbread recipe I made a few months ago, so I will definitely give it a try.

I added a 1/2 teaspoon of sweet corn extract to the keto grits and the taste was kinda off for me. Absolutely loved the consistency. I will leave out the extract next go around. Thanks for the idea!

I think it was actually a reader who left the idea in the comments. I am not personally a fan of corn extract. Glad you like the grits though.

Yummy. I'm a Georgia girl. I was craving grits, so I made this with thick cut bacon. Definitely hit the spot. Next time I'm going to do fish and shrimp with it. Thank you so much for this.

Thank you for the recipe. It's a bit strange due to a little nuttiness but really good too lol. I think I'm going to order some corn extract/flavoring and add it.

Oh wow, what a good idea. I've never heard of corn extract before. Guess I'll need to order some on Amazon now. Thanks for the tip!

Oh my goodness, pulled pork and cheese grits sounds wonderful. I was thinking about doing a shrimp and cheese grits recipe. I live in the North, so you don't really see it around here, but it has always sounded good to me.

Just made this. It was too easy. I used almond meal unblanched and after adding the cheese also a little whipping cream to thicken it does taste a great deal like grits! Will definitely subsitute when I am in the mood for grits! Thanks!

Yay! I'm so glad you like the grits. i like using unblanched almond flour too. I bought it by accident, but I end up using it all the time.

Haven’t tried this yet but wonder why you use superfine almond flour instead of almond meal which is much grittier like regular grits? Is the almond meal too gritty?

That's a good point about almond meal. I've never seen anything but super fine almond meal in my local stores though. There are so many oddball specialty ingredients that you use for low carb cooking, so I try and use ingredients you can buy in a store near you, when I can. If you do try it, please check back in and let me know how it goes.
