This morning I made myself some Keto cheese grits and eggs, so obviously I’ve been thinking about the 80’s show Alice. Remember the sassy waitress named Flo? The one whose catchphrase was “Kiss my grits!”.
She was a hoot.
But low carb Southern cheese grits, let’s talk about it.
I’m not Southern, but I do have a long history of loving cheese grits. I used to eat them in this great brunch place in the West Village called Cowgirl. Add some crisp bacon and a runny egg on top and you were in cowgirl heaven.
💬 But what are the carbs in grits?
Normal grits are made from cornmeal and have an average of 30g net carbs per serving. Not great. They are made from cornmeal, so they aren't even a little bit Keto. No point trying to put lipstick on a pig. Grits are very unfriendly to low carb dieters.
💬 So how are these cheese grits Keto?
We are going to use low carb almond flour in place of cornmeal in this Keto cheese grits recipe, so our version has just 3g net carbs. Muuuuuuch better. Phew!
🥣 Ingredients
This recipe has just three ingredients:
- almond flour
- water
- cheese
But these Keto cheese grits can be as dressed up or as dressed down as you like.
🍳 Low Carb Additions
- Proteins: Eggs, Bacon, Sausage, Pulled Pork, Cajun Shrimp
- Vegetables: Green Onions, Cherry Tomatoes, Spinach, Pico de Gallo, Avocado, Jalepeno Peppers, Garlic
- Cheeses: Cheddar, Colby, Goat, Manchega, Parmesan
📖 Instructions
- Add 1 cup almond flour, 1 cup water and ½ teaspoon salt to a sauce pan.
- Bring the mixture to a boil and simmer for 1-2 minutes.
- Stir in ½ cup shredded sharp cheddar cheese and mix to melt and combine.

Ingredients
- 1 cup super fine almond flour
- 1 cup water
- ½ teaspoon salt, or to taste
- ½ cup shredded sharp cheddar cheese
Instructions
Step 1. Mix together almond flour, water, and salt in a medium-size saucepan.
Step 2. Bring to boil over medium heat, whisking occasionally, 4-5 minutes. Once the mixture is boiling, whisk continuously for 1 to 2 minutes, until it visibly thickens.
Step 3. Remove from the heat and stir in the cheese. Mix until melted and combined.

I’ve been craving grits, so I went on a search & came across your recipe. Mostly, I was finding riced cauli recipes, which I just didn’t want for my grits.
I was a little wary, but decided the recipe was simple enough to give it a shot. I’m SO glad I did!! I was very pleasantly surprised at how closely this replicates grits (granted, it’s been a few years since I’ve had any). I will definitely be making this again! And yes, I’m looking forward to shrimp & grits with it, too.

Thanks for a great idea for using the almond meal I have left over from making almond milk ... I use 1 cup of almonds every week for making almond milk & hate to throw away the meal left over .. I've made cookies & crackers with it ... but this is a great idea as I really like grits & the many different things one can add to the basic dish is amazing ... beautiful creativity !!!

I will start by saying that I WILL be making this again, but with a meat add-in next time. I would actually rate this more at 3.5 instead of 3 stars. I made the recipe exact, so I will just review it based on my experience. The almond flour still tastes like almond flour, even with the cheese. I thought I'd better add some chili powder to add a little spice, which I'm glad I did. It still didn't taste like grits (flavor over texture), so I added in some Frank's hot sauce. This made it more palatable, but I still couldn't equate it to actual grits. I think the flour makes them very heavy and that makes them harder to eat (for me anyway). To make them creamy I might try using half n' half or whipping cream/water mix instead of all water next time. I will say that (in my mind), blackened or cajun shrimp sounds amazing in this recipe! I know that low-carbers have to adjust to different tastes and textures to substitute high carb faves, it's just the reality of it! I am very thankful for this recipe though!!

I read this recipe with both an anxious and hopeful heart. Could it possibly be that I had found what was lacking from my northern girl displaced in the south diet? As a transplant, grits were a “foreign” food. We don’t have that up there in the north you guys (sorry, y’all...). The longer I lived in LA (that’s Lower Alabama) the more I liked them. I liked them exactly forty pounds of jiggle I was now struggling to loose. As I poured the liquid into the almond meal I must say a small grimace flashed across my face. Surely this watery, dirty looking puddle of “bleah” could not turn into the creamy grits that my thunderous thighs had been missing for almost a month. Holding fast I began to whisk the mixture and was oddly satisfied as the molten lava began to splat and spitter all over the place. “Just like real grits,” I told myself, repeatedly. I carefully, with arm extended and pot spitting away, removed the thick concoction I had just made and transferred it to the awaiting happy owl potholder that had been lovingly placed on my counter. Quickly, I dumped in the cheese I had carefully shredded just moments ago, and with a whisk and a prayer, married the two together into cheesy faux grit marriage. The creamy Cajun shrimp and sautéed green beans I had just prepared awaited to top what I hoped to be a passable substitute for my now new obsession with grits.
Holy SH!T, y’all (proof they’re good). These are slap ya momma good. 20/10 would make again.

This recipe was amazing! no..it was AMAZING!!! A Southern "delicacy" that most people I know really miss it when they began to do low carb. Even if you don't usually care for grits..you might just try this recipe out. It has SOOOO much flavor but none of the "grittyness."
Just try it...so easy...takes less than 10 minutes to make and best of all you can eat it with non of the guilt of regular grits! 3 net carbs <3

WOW! All I can say is Wow I have never been one to crave grits...or even like them much honestly. After beginning my low carb life, as most people probably can attest, I CRAVED carbs and anything carb...lol. I thought to look up grits and a low carb life and was a little sad when I read how high in carbs grits are. I cannot express how excited I was to land on your recipe!!

I've been making a tamale pie with a corn( almond flour) bread like crust for years, and it tastes pretty good. I'll be making this for the first time today to go with our Braised Beef Short Ribs. thank you for the recipe!
P.S. People who have tried Corn Extract: Please let us know how it tastes. I'm skeptical of the reviews, they vary from great to tasting like bananas to smelling like silage (:P) and it's expensive. thanks!

I'm so glad you like the grits! You are the first person to ever ask how much they could eat of something. Luckily, the answer is as much as you probably want. Each serving has 3g net carbohydrate, so that is a perfectly fine amount of carbs for breakfast, lunch or dinner. Just make sure to get some green veggies and protein in there too. You should determine the total amount of net carbs you want to eat per day (usually 20g at first) and made sure that the grits will fit into your plan.
