Today’s soup recipe reminded me of that funny scene in Best in Show where Jennifer Coolidge talks about the amazing relationship she has with her elderly husband. (video below)
They both love the outdoors and “We love talking and… not talking. We could talk and not talk forever and still find things to… not talk about.” Jennifer Coolidge is a national treasure.
And so is this recipe for low carb gazpacho.
This cold vegetable soup is basically just a liquified salad. You blend tomatoes, red onions, yellow bell peppers, cucumbers, parsley, lemon juice, olive oil and basil in a blender and you’re done. It’s an easy low carb soup that you can throw together in 10 minutes. And even with all those veggies, the carb count is just 5g net carbs.
I think this is the beginning of a great relationship.
Easy Low Carb Keto Gazpacho
This easy low carb Keto gazpacho takes 10 minutes to make and tastes like a million bucks.

6 cups chopped tomatoes (4-5 medium tomatoes)
2 cups chopped peeled cucumber (1 English cucumber), divided
1 cup chopped red onion (1/4 red onion), divided
1/3 cup chopped fresh parsley, divided
1/3 cup chopped fresh basil, divided
2 tablespoons lemon juice (from 1 lemon)
1 tablespoon extra virgin olive oil
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grape tomatoes, quartered
1. Add tomatoes (but not grape tomatoes), 1 1/2 cup cucumber, 3/4 cup red onion, 1/4 cup parsley, 1/4 cup basil, lemon juice, olive oil, salt and pepper to a food processor or high powered blender and process until liquified, about 1 minute.
2. Add in remaining chopped vegetables and chill for 1 hour before serving. Garnish with remaining herbs.
